I've just had a friend ring up in a panic and say her hubby is bringing his boss round for dinner tonight (didn't know people still did that!!) anyway, shes not a fancy cook, and is stuck for what to make that is easy and fairly quick. she has time to go shopping later, but i has asked me for some ideas, and my mind is a blank. can anyone give me a couple of ideas. it'll just be for the three of them,

Is she shopping on a budget or can she afford to splash out on a bit of steak or something? Add a nice green salad, baby new spuds and a mushroom/pepper sauce (very easy to make) and she has a quick and easy meal that should satisfy any boss
Edit: can substitute the steak for pork chops, chicken portions, salmon/fresh tuna and going the cheaper route how about HM burgers or fishcakes!"An Ye Harm None, Do What Ye Will"

really depends on her budget- if she can afford it (and also dinner worth investing in) then would suggest she went to marks and spencers- if she shops at tescos/asda etc and less money/less investment then one of pasta sauce- wouldn't do spaghetti bolognese as some find this messy when eating. even in tescos loads of deserts (cheese cakes etc) are pre prepared. would this boss really know (or even care) she hasn't cooked the meal from scratch. thanks0

Fresh flowers - nice table cloth and candles - sray polish in air so it smells as if you have been polishing.
Bread in breadmaker if you have one for the smell.
Fancy salad leaves in bag and pieces smoked salmon as starter.
Easy curry
Then lemon curd and meriengue pudding ( on list)

That lemon meringue smash is brilliant - and you can buy the meringues (not very OS but dead easy). I made mine early in the afternoon - served up in long stemmed red wine glasses and chilled in the fridge.

How about chilli-con-carne or a pasta bake? Both can be made simply with packet or jar sauce from the supermarket, and both can be made to look impressive with loads of extra 'serve yourself' bits on the table.
Pasta bake goes with with a nice salad and crusty bread, and chilli could be served with sour cream, guacamole (sp?), salsa and grated cheese.
A quick-ish sausage 'cassoulet' which always goes down well - brown sausages and bacon bits/lardons in casserole dish, then add a tin of mixed beans - drained - (Tesco do cheap mixed bean salad in tins) and a jar (or homemade) tomato pasta sauce. Dolmio is fine. Drop cherry tomatoes on top and bake for 40 minutes. Looks great when served in casserole dish with fresh green herbs scattered on top, too. Serve with tato's and any veg, with crusty bread.Debt free date: October 2006 :money:0 -
