  • my gran used to whip up condensed milk with jelly and leave to set so it was jelly underneath and a sort of mousse on top. Probably a bit kinder to the waistline though I have to say the millionaires shortbread would win out on taste for me every time :)

The South african lemon meringue pie sounds rather yummy.

But then again so do all of the recipes.

    INGREDIENTS

    · 1 (14 ounce) can sweetened condensed milk
    · 1/2 cup water
    · 1/2 cup light cream
    · 2 pounds white sugar
    · 1/4 cup unsalted butter
    · 1/2 teaspoon vanilla extract

    DIRECTIONS

    1. Butter a 10x15 inch jellyroll pan, and set aside.
    2. Pour milk, water, cream, and sugar into a large, heavy bottomed saucepan. Add the butter, and bring to a boil over medium-high heat, stirring constantly.
    3. Reduce heat to medium, and cook for 20 minutes, stirring constantly. After 20 minutes, remove from heat, and beat in vanilla extract. Continue to stir until the mixture is no longer glossy. Pour into prepared pan, and let cool until hard, about 6 hours.

Another one is to add the contents of the tin to 3/4 lb of coconut, few drops vanilla essence, and a pinch of salt. Drop a teaspoon of the mixture on greaseproof paper and cook for 15 mins in the oven.... Condensed milk kisses.

I bought some condensed milk today to make these after seeing this post the other day :o

I'm going to make some to see what they turn out like and am going to make some just before xmas to put in my home made gift hamper for my best friend.

Anyone know how long they will keep for?
Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...
  • light cream = americanism for single cream ( " heavy cream " is double cream :) )

  • Made flapjacks this morning and now have half a tin of condensed milk left over.

What can I do with it? My dad would have it in a sandwich but just can't bring myself to be that indulgent - even at 22 weeks pregnant!

    Many thanks
