Can anyone give me sum advice please?

Hi i am not too good at finding good holidays and want to book at good holiday for my 1st wedding anniversary and mine and husbands 30th birthdays. heres what i looking for....
Going in November end of around the 24th 08
Looking to spend around 1,500 each
Got to have things to do a beach and childrens activitys.
Just really sum advice of places to go and where to look any advice welcome we going from scotland if that makes a diffrence and will have a 3yr old with us. husband wants sight seeing and places to visit.
we recently went to egypt and as much as we loved the holiday we hated all the hassle you get so if we could go sum where you dont get so much hassle it would be great we was looking at the canary islands but not sure there much for hubby to do also we not bothered about night life and lots of shops any advice would be gratefully recieved thanks wendy.:T

Mexico - you have th sites, the beaches, the sun, the food and the people are wonderful, you also have a good budget so you can go for somewhere really nice.
we went to Dreams in Tullum 2 years ago with our children and we all loved it, the kids club was wonderful, however it is a bit of the way out so if you fancy Mexico then I would suggest Playa del Carmen as an excellent area.
you can hire a car and take yourslef about, far more fun and cheaper, there are loads of places to go such as Xel-ha which your child would love so it really can give you everything you want and more0
