I regularly freeze cooked chicken and then defrost it and reheat it and have never had any problems.
You can freeze most things as long as they have not been previously frozen in their current state. ie you can freeze something that has not been previously frozen, defrost it, cook it (change the state) and freeze again, but only once. So you can safely freeze once in its raw state and once in its cooked state.
For ideas on what to use the chicken for have a look at these threads:

hi, if i had a large cooked chicken, i think i`d cut the drums off for tea of lunch tomorrow, then remove the breasts etc to chop for curry/chic tonight etc and then boil rest to make a stock , pick remaining meat off bones and make a chic and veg soup. One day I will live in a cabin in the woods0

Hiya,
I have trouble with the freezing reheat/don't reheat rules. I remember it best that you can only freeze in once in each "state" as it were. So you can freeze it once raw, and freeze it once cooked.
If you were to say make lasagne from frozen ragu sauce, best not refrozen. So with the chicken, you can freeze it now, but you couldn't then defrost it, make a curry and then freeze it again.
Complicated, isn't it!!
