I am so glad I posted here. You guys have made me feel much better about it all.
I am going for fish fingers for tea as I know that DS2 will eat them but I will have to do DS1 some plain fish as he has recently decided he doesn't like fish fingers. This has just made the simplist of dinners complicated. I would normally just do HM wedges but OH has decided he has gone off them and DS1 isn't keen. May do new pototoes but then DS2 won't eat them!!
I really fancied veggie lasagne but I do not want to throw it away coz none of them will eat it.
I know a lot of you batch cook. I must give this a go once we'ved moved house. Then I may not mind pulling a couple of different things out of the freezer and cater more to their fussiness. Oh well I've made a weetabix cake in my BM coz I have more of a chance of that being eaten. It has to be the best cake, I bung in a couple of bananas and 1/4 the sugar so it is really quite healthy. it may work as a threat also, no cake if you don't eat your tea!! I will have to put my thinking cap on and try some new things.

What about HM fish fingers? I have a recipe somewhere. I'm just off to do the school run so will post it in a bit.

You could just buy enough plain fish for everyone and breadcrumb some for DS2. As for the spuds, could you do boiled for everyone and keep a couple back and maybe do them as wedges or saute them?

That would be great. I have breaded chicken before but never tried it with fish. When OH wakes up (he works nights) I will see what kind of potato he wants and go from there.
hin501- I will try that this weekend with DS1, not quite brave enough to let the little in the kitchen! I will do that when I have plenty of time, it's all a bit of a rush during the week coz I do and earlyish dinner 4.45 coz OH has to go to work for 6. Its easier when he wants to take dinner to work with him so I do dinner a bit later

I mix flaked cooked fish (salmon if I have time, tuna from a tin if I dont) mashed potatoes and sweet potatos. Shapeinto fishcakes or fingers, then dip in eg, then breadcrubs then shallow fry.

I was a faddy eater too. For me it was about the way I ate food or the way it was presented. Although i eat loads of things now, i still will only eat carrots if they are cut into sticks, cut them into discs and i wont touch them!!

My DD eats most things , but she wont eat courgettes, funnily tho she will eat zuccini :rotfl:

    Here you go...

    LEMONY FISH FINGERS

    Small bunch of parsley
    2oz bread
    1 lemon
    Salt and pepper
    2 eggs
1lb skinned and boned white fish (the thick middle bit would work best)
    1 tablespoon veg oil
    knob butter

Chop parsley and grate bread (or whizz), grate the zest from the lemon and mix the 3 ingredients together and season.

    Beat the eggs.

Put the eggs and breadcrumbs in two separate bowls (sorry the for idiot's guide! It's the way it's written!!)

Cut the fish into finger shapes.

Dip fish into egg then breadcrumbs, making sure each finger is coated evenly.

Heat oil and butter in a frying pan. Fry for about 4 mins each side until crisp and golden.

Let us know what they're like. I haven't made them yet!

I sometimes take my 2 shopping to the local market/farmers market and get them to choose what they want- they lay it out as a big picnic in the living room when we get home and its shocking what they will eat which I know they would refuse if I gave it to them! Last weekend we made fruit kebabs on straws for pudding and then I held them ransom until all their lunch was gone;) little monkeys gobbled it up!
