Like many of you gardeners I have a glut of produce at the moment. Have just lifted my onions, shallots and potatoes today. I have loads of yellow cherry tomatoes (yellow tumblers) and was wondering if anyone has dried them and stored them as sundried toms in olive oil.
In the next few weeks I will have loads of chillies to store. I have dried them before but wondered if like the toms I could store them in oil in jars.
Anyone had experience of this or ways of using excess garden produce.
Cheers

Since no one posted any answers I did a bit of digging 'on tinternet' and found out that you can dry tomatoes in a low oven, sprinkle with salt and a few dried herbs then store them in olive oil in sterilised jars. Just like sundried tomatoes this really increases the strength of flovour. Same with chillies, can either dry them or store them in oil.Humans only use around forty percent of their brains capacity. Sounds yum. I'm still waiting for our pigging tomatos to go red - they seem to have been green for ages. Me and DS look every morning to check.0

Tell me about it - I have about 100 tomatoes on the vine still bright green so I had to go out today and buy some!

I have dried out tomatoes in the oven before, you could put some crushed garlic or basil leaves over the toms before you put them in the oven. They make nice gifts if you put them in a pretty jar. Dried chillis in oil works well too.
I've been trying to use up my glut of tomatoes and have recently made tomato chutney (with green tomatoes), tomato and chilli chutney (ripe tomatoes), tomato soup, tomato ketchup and lots of pasta sauce for the freezer. Anyone else got other ideas for using up tomatoes?I have the mind of a criminal genius. I keep it in the freezer next to Mother....0 -

Thanks Squeaky! I forgot about this one and as I only have two portions of sauce left in the freezer, I'll be making up a big batch of curry sauce this afternoon. :TI have the mind of a criminal genius. I keep it in the freezer next to Mother....0 -
You're welcome - I know it uses more onions than toms but it's certainly a nice way to use some upHi, I'm a Board Guide on the Old Style and the Consumer Rights boards which means I'm a volunteer to help the boards run smoothly and can move and merge posts there. I've just made tomato chutney. I found a recipe for an indian version and thought it would replace the mango chutney that I seem to buy by the bucket load - I'll post it on the recipe thread later.
Never made anything like that before - so I'm feelling very proud of myself. Last year I gave away loads of tomatoes because I didn't know what to do with them!0
