i'm normally just a lurker on here..
    but how about..

beef mince: babotie, quick casserole, i make a curried shepherds pie with a parsnip toping..

pork. really quick stroganof, pork, mushrooms, creme fraiche (although i'm sure you can use yoghurt) and lots of soy sauce.

maybe serve the cod and tuna with a couscous salad, made with chopped peppers salad, herbs, and dressing.

a chinese night, with the duck, egg fried rice, and a stir fry with the beef or pork. Honey and soy marinade for pork, chilli for the beef.

sorry can't really thing of anything else off the top of my head

oooh paellas definetly a good idea you've got lots of delicious food.
    mabe also a fish pie.

maybe the cod cooked in a garlicy tomato sauce
    ooo garlic prawns!

do you do tacos or burritos with the steak or the mince?? you can make tortillas pretty cheaply for burritos.

Wow! What a treasure you have there! You could make almost anything with such a variety of meats and seafood....
Apart from the suggestions above it also seems to me that you are very well stocked there for the upcoming barbecue season. Could be very handy on those days when the sun is shining brighter than expected and an impromptu barbecue would be just the thing. HM burgers, marinaded steaks, scallops on a stick, barbecued tiger prawns, ribs, salmon in foil - spoiled for choice!
Provided you like barbecues, that is.

herb crusted salmon.... mix philly (or supermarket equivalent) with a clove of garlic and a pinch of parsley. spead on the salmon, then top with breadcrumbs mixed with herbs (dill works well with salmon). put under the grill for 10-15 mins

maybe a thai fish curry ?
salmon and dill bake is really good, all you need is some fresh dill, then you layer up potatoes onions and salmon cover with a white sauce containing dill and bake.

you could then use the left over dill to make creamy swedish meatballs and mash with the pork mince.

    barbecue spare ribs?

maybe make your on crispy topping for some of the fish fillets, with peppers tomatoes breadcrumbs garlic?

Sorry for the delay in replying - you have all come up with some fantastic ideas and I am looking forward to next week's meal plan.

Friday - Kung Po Chicken with Noodles and Spring Rolls

    Saturday - Chilli pasta bake

Sunday - Steak, HM Wedges, Veg

    Monday - Seafood Paella

Tuesday - Babotie - I have no real idea what this is, but have found an online recipe and have all the dry ingredients so what the heck!
Does anyone know if it can be made in advance?

Wednesday - HM Minted Lamb Kofta with Roasted Veg Couscous

Thursday - Salmon and dill bake

    Friday - SW Moussaka

Thanks again everyone for all the suggestions:T
