Hi rnshonI make 2ltrs at a time cos we use loads. I've had many botched attempts but this technique seems to work (for me!)

Warm UHT milk to blood temp in the micro. This is nowhare near as warm as most people imagine. once you can dip in a finger and it no longer feels cold it is warm enough.

Stir in 2tbsp of live yog starter per litre of milk (yog can be shop bought or saved from your last HM batch. If you want pro-bio buy pro-bio as your starter. Ohter posters freeze their starter if they are not yogging for a few days and say it still works fine. I keep mine in the fridge but then I yog every other day.

Add sugar if you like it sweeter I sometimes add vanilla essence or orange essence at this stage also. Keep at a steady temp for 5 hrs or so. I use my keep warm function on me slo-cooker for this turning on and off as required but a warm airing cupboard is just as good. But I would forget it there and end up with a load of cottage cheese I'd no use for!

After five hrs or so I chill it in the refridgearator where it will thicken some more. Sometimes I sieve it though a clean muslin to give a greek style yog or I dilute with milk or fruit juice to make yog drinks. Great instead of cream on fruit or pies and nice on breakfast ceriel too. With home made jam it knocks Muller Fruit Corners into a cocked hat.

Job done - let us know how you get on.

Don't want to sound thick but what is yog starter? I buy the big Onken plain probiotic yogurt to use in smoothies - would this be the sort of thing you mean?

From reading the previous threads on yogging, I believe by starter they just mean any live yoghurt, this can be shop bought at first then you can use the yog you have made as a starter :) Your Onken is probably fine!

Thanks. I've had a quick look at the yogging threads. I cannot buy a yogurt maker - I don't have room what with the breadmaker, slow cooker, cappucino machine, blender etc. aghhhhh. i just know I'm going to start wanting one - I don't even really like yogurt but can bear it in smoothies.
  • They did a feature on these on Real Food - the general consensus was that the advertising was misleading and there was no benefit if you have a normal healthy gut, but on the other hand for IBS and other conditions they may be helpful. Must admit I take them from time to time, more as a 'just in case' although I prefer to eat live yoghurt as those Yakult things are *&^% expensive!
