Can anybody advise how I would configure the below pivot table to filter out any value over $100 and not include it in totals?

Sort your original data table by increasing value. Extract another pivot table but select the range down to the row which contains the last $100 entry.

I've not any experience using pivot tables. However, if you wish to calculate the totals of values in a particular range - excluding values greater than 100 - you would use the expression:

eg =SUMIF(A1:A9,"<100") - except instead of A1:A9 you would insert the range you needed the totals for

Depending on the underlying data, you should be able to get field options, to "hide" or filter out "<100"

You can do this for date ranges and so forth, so you can also with numerical data, but it depends highly on the layout, and what area the fields are in (column, row or data).

Highlight the field and click the Field Settings icon on the Pivot toolbar, else try the grouping options.

Also on fields with data, open the drop down menu, and the unique valued data should be listed all with a checkbox, you can show and hide using this too.
