    Polynesian Chicken X2-3


    2-3 chicken portions
    1 level tbsp cornflour
    2 tbsp oil
    3 tsp water
    3 pineapple rings
    1 tomato cut into 8
    1 tsp soy sauce
    ½ green pepper cut in rings
    1 stick celery

    Brown chicken in oil. Lift into casserole. Drain pineapple and make up juice to ½ pt with water. Blend cornflour with the water and add to the juices in the pan. Add pineapple juice and soy sauce. Pour over the chicken. Add sliced celery. Bake at Gas 4 180ºC for 1 hour approx. Add pineapple pieces, tomato wedges and green pepper 10 mins before serving. Serve with boiled rice.

    i know you said you don`t really eat puds but you cant beat the good old pineapple upside down cake with custard. line a bowl with the pinapple then pour over a sponge mix then whack it in the micro for 3/4 mins yummmmm:drool:
    proper prior planning prevents !!!!!! poor performance! :p

    There's been some good suggestions already but I'll just repeat them anyway :p

    Sweet and Sour dish
    Ginger and pineapple (use pickled stem ginger in syrup for this)
    Pizza
    Salsa
    Cheese and pineapple
    In a salad
    Jacket potato filling
    Fried rice/rice salad
    Batter it
    Make a chutney (saw one with it at Farmer's Market)

    Talking of pineapples reminds me of this story I read: Someone got held at customs because they had so many tinned pineapples in their luggage. The officials were suspicious and it turned out they had drugs inside!

    The curry is an interesting one and isn't as disgusting as I once thought. I've seen some menus where they put mango, lychees even banana! I'm not one for sweet curries but it's good for your 5 a day!

    we are big pineapple fans ! and we like it with tuna and pasta, with a tomatoe sauce yummy !!!

    How about chicken/prawn risotto, hubby makes it and it is yum

    Frozen Peas
    Frozen Sweetcorn
    Tinned Pineapple
    Chicken or prawns or bacon
    Vege stock cube

    Really easy and filling
