Left over spag bog sauce in fridge

I tend to cook for 3 since the oh is a veggie. I would use about 1/2 lb mince for this, 2 carrots, onion, glass ish of wine if open, sherry/port/dubonnet/red martini if not, tin (and a bit if I have some open)of tomatoes, good squeeze of tomato puree, stock cube garlic, herbs etc.

To be honest this would probably stretch to 4 but my 14 year old daughter usually eats 2 portion as she absolutely loves this meal! My 18 year old son and I have normal size.

At the same time I make a veggie one with courgettes or butternut squash, leek, celery or whatever veg I have to hand but other wise same ingredients for oh. His usually lasts at least 2 meals. His veggie version is always different as I never have the same veg in the fridge. And he wil eat anything veggie.
