Left over spag bog sauce in fridge

I was wondering how long I could keep a tomato and mince based pasta sauce in the fridge for.
As tonight we will have spag bog and I will make an extra portion for husbands lunch tomorrow. And thought I would make extra sauce.
As I saw that someone on the meal planner thread was having the sauce on jacket pots. Would that be ok to keep to Wednesday night.
I personally think ok but what do you think?

Hi calley,
I would happily keep a bolognese sauce from Monday until Wednesday in the fridge. Just make sure that once it's cooked you cool it and chill it as quickly as possible. It's when it's sitting at room temperature that you get problems.
Also cover the actual sauce (not the container) with cling film or foil as the top dries out very easily in the fridge.

I cook 4 portions of spag bol sauce, eat one and freeze three. Defrosts ok and who am I to complain to myself about my cooking :rolleyes:.................

I thought about freezing but thought as it was just a couple of days it would be a pain. My husband is not great about getting things out of the freezer either.
I just am never sure how long to keep things that are cooked in the fridge for. Mind you when you have dustbin for a husband nothing stays in the fridge very long :rotfl:

When I freeze individual portions of home-made bolognese or chilli, I usually microwave them from frozen; usually 2 or 3 goes of 3 minutes in my 800w oven does the trick.0

I was about to day it is nice in tortillas too, but that is similar to the pancake idea. I have been known to add a tin of chopped tomates to a left over potion with maybe some peas or something and it makes a whole other meal.
In fact in recent times I have tended to cut the amount of meat by half that I put in it. Dee: I use less meat too, these days; I find 1lb of meat, two cans of tomatoes, a large glass of wine, a few sticks of chopped celery and a carrot or two about right. That makes about 4 portions.
What sort of ratios do you use?0
