Yes to two eggs, definitely. I also much prefer lard as the fat in the tin. It just doesn't seem right to use veg oil.
As a guide, the batter should sizzle when it hits the fatProud to be dealing with my debts :T

I have just about given up trying with my own batter mix, its always soggy, OH tried the other day with an cheapie batter mix from Tesco, just add water one and it came out perfect and crispie... thats what I will be doing from now on, got a feeling it was either 8p? or 28p sorry a senior moment...:rotfl:#6 of the SKI-ers Club :j

I always chuck in a scant tsp of baking powder so it rises up a bit and isnt so soggy...seems to work.August grocery challenge: £50
Spent so far: £37.40 :A0 -
Toad in the hole is one of those REALLY easy recipes that hardly anyone can get right. I don't know who started the myth of them being really easy but I would like to hit them;)
Can't add anything else to the above but I reiterate the 2 eggs and oil hot as hot as possible. I usually start my oven hotter then turn it down a to 200 (G6)0 -
i buy the packet batter mix and that seems to work out well. i cook it in a ceramic lasagne dish and add some part cook sausages to the batter and leave it for a good half an hour.Debt free 3 years early :j
Savings for house deposit - very healthy
Cash back earnt so far £14.570 -
Do you open the oven door while it's cooking? I don't open it, and it usually turns out just fine with flour, egg and milk in the batter (with seasoning, of course). 125g flour, 1/4 pint milk, 1/4 pint water, 1 egg, s&p.
Oh, and I agree with the oven being as hot as possible.Hope that helps

My husband does a wicked toad in the hole and he uses the Jamie Oliver recipe:-
3 eggs to your 4 oz flour and 1/2 pint of milk.
He says make the batter 1/2 an hour in advance and let it stand for a while, don't be shy with the oil in the tin, as other have said, make sure it's smoking hot and once it's in the oven DO NOT PEEK! leave it be!
I can definately vouch for this one! Yum.
Hope this helps,

I take the sausages out of the tin and pour off a little of the fat then put the tin back in the oven for 10 mins, then pour a little batter mix in the tin then put sausages on top followed by the remaining batter it never seems to failBlessed are the cracked for they are the ones that let in the light
