I use dove's farm organic strong white normally and find this makes a nice loaf, but i was tempted by the cheap mr t's strong white flour and had a disaster this morning so i think i'll go back to dove's farm i have also just bought myself a new loaf tin on ebay which come with some free improver and fresh yeast so i will see what difference this will make.
I tried Mr T's strong white flour too but found it made quite a weak loaf. I normally use Waitrose organic, but in Mr T recently I found Dove's Farm at 44p a bag cheaper, so I've got a few of those in atm.0 -
Another vote here for Waitrose organic strong flour, or Dove's Farm.

Well, my first attempt was a resounding success. I am so pleased with myself! Have sliced it up and frozen half the loaf for later as I live on my own and don't get through bread very quickly. Will definitely be doing all my bread by hand from now on. I'm a convert!0

Just made my first loaf using dough improver and have to say i am now going to invest in some more:j . It made a huge difference to my loaf, it is nicer than the loaf I sometimes buy from the bakers but made with my own hands:p . Not sure if using dough improver is cheating in the eyes of artisan baker but i am now a convert.

Does anyone have any experience of baking pumpernickel bread? I'm quite an experienced home baker, and I'm used to working with rye, spelt & sourdoughs, but I've never tried this, and a friend has asked if I could make her a loaf. Any ideas where I might be able to get the flour, or tips for using it - I assume it's just like a dark, wholemeal rye flour?2015 comp wins - £370.25

This is just to say a really big thank you to Thriftlady for the bread roll recipe. As somebody who has been baking h/m bread for many years, I can honestly say that her recipe on this board for bread rolls is the best I've ever made!

I am a convert to spelt flour - I didn't know it existed but there was a feature recently in Country Living. I've just had a nose on Ocado and the price seems to have doubled - gah. Looks like it's back to Dove's Farm for me!I like you. I shall kill you last.0
