    Is it possible to over knead your bread at all? Im never quite sure how long to do it for on the knock back bit. If I dont do it enough, does that make the bread heavier?

    It really doesn't need extra warmth to rise: just time;). A long slow rise will produce a better tasting loaf.

    re covering the bowl, try a showercap, it works beautifully

    I can`t say it is the weather that has got the sourdough going, probably the 2 earlier additions of 000 flour but it was certainly going like the clappers last night

    You really don`t need to knead to make good bread, just stretch on a floured tray and fold with a bit of flour spread around. Just do it several times and don`t worry as yeast will wait for you. Start quite `wet` and use floured finger tips or a scraper thingie
  • OK so far so good :) have been very impatient though so while it's been proving I've made a quiche and a batch of fruit scones and a batch of parmesan and herb scones too!

  • Lovely!! Inspired by the picture of the bread rolls, after reading this thread yesterday, I rushed home from work today full of excitement to have a go at the rolls. My BM has turned out a few bricks on the last few occasions, so I've been doubting myself, the breadmaker and the yeast.

    Conclusion being I wish I had a little more time to leave the dough to prove as I ended up rushing it all along after I couldn't wait any longer. My feeling from previous BM failures was that my yeast is past its best despite having been kept in the fridge, so I only did half the recipe just to test and made 8 fairly decent looking rolls. They were a tad on the dense and chewy side and maybe a couple more minutes in the oven wouldn't have gone a miss either. So all valuable lessons learned for the next time and despite not being perfect the rolls were perfectly edible. :T

  • It's ready and it's delicious!!! I just started to take pics then the batteries went, so they are recharging. I couldn't wait though and took the end off and it's soooo much nicer than anything I ever managed to produce in the breadmaker (which was v hit and miss)
