I make bread everyday, my recipe is
350g strong flour
1 block fresh yeast (i buy morrisons 4 blocks for 39p)
tsp salt
tsp sugar
hot water as needed
mix ingredients together and add water until it mixes to a dough, knead for about 3-4mins then i shape and dust with flour and leave it covered in the loaf tin for 30mins on top of my oven or in a warm place (i usually just pop a tea towel over it), then bake at gas mark 7 for about 30mins. Comes out perfect every time.0 -
Just out of curiosity really and because there's a breadmaker thread going at the moment.
I don't use a breadmaker instead I use a very old (I call her my old lady) Kenwood mixer with dough hook let it rise once then knead it a second time by hand. Maybe i'm very old fashioned who knows so...

No you're not the only one there's me too. I do it just as you do, except when I don't want to put the oven on (e.g. in this hot weather) then I make a small amout in the food processor and place either as rolls or a round loaf in the Remoska, rise once and cook - delish.

There's lots of us - I don't use any machine for my HM bread - just my handsI'll add this to the exisiting thread so that you need feel lonely no longer

I'm another who always makes it by handI get on better as I don't like it baked in a BM -so used to just use the BM to make the dough to bake in the oven..now I just do it by hand and much prefer it

I use my kitchen aid to mix and knead the dough, then do the rest by hand.0

I do it completely by hand too:D I think breadmakers take longer and produce an unsatisfactory loaf with a hole up the middle. The recipes are odd too, calling for far too many unecessary ingredients. I like to make 4 loaves at a time and freeze them-you can't do that with a breadmaker.0

I also started with a Breadmaker but got fed-up of waiting for it to bake, so changed to using my mixer with dough hook and finishing by hand a lot lot nicer and quicker too....:j£2 Pig has £86 in his Tummy. I am seriuosly Become a O/S Saver0

I am in the middle of making bread, sourdough from my own wild yeast. Very satisfying to make, slow cooking at its best. Should be ready to bake this evening and then I will let it mature for a good 12 hours, when I will start prepare my next batch of starter. I love the way the starter can sleep for weeks in the fridge and then takes 3 days to wake up or I can keep it awake with flour and water at room temperature. I put some ground malted wheat grains in this one so it should have a lovely nutty taste
I also have a breadmaker because I don`t always have the time or inclination to make sourdough but I do get fed up with ordinary yeast bread.0 -
I get perfect results using a cheap breville mixer (with kneading hooks) and a bread tin, I also let it rise in the hot dishwasher as the hints mentioned on the kitchenfoods.co.uk website
I also use the bread improver from this shop and the flours, have done for years with great success, the improver makes a massive difference and is quite economic in use.0
