mp3 ringtones: how to edit them?

Hi;
My phone only plays mp3 ringtones; the pre recorded normal ringtones have stopped working.
I want to set it so only the mid section of a certain tune plays as the ringtone (I use itunes and have a mac), you know the chorus or whatever, just not the intro.
Does anyone know how to do this??

Make sure you download the
lame_enc.dll
aswell, that enables it to save as mp3 (unless its now included in the newer version)
