I believe, from a thing I read on the internet, that the consistency of flapjack is dependent on the cooking temperature. I'll see if I can find it for you....

The recipe in the flapjack thread that uses condensed milk is chewy, but not thrifty as it uses condensed milk. it is however, the yummiesst flapjack I ahve ever tasted.

Years ago I had a yogurt maker and it was great, but haven't got one now. However my slow cooker has a recipe for making yoghurt in the booklet. I also remember friends made yoghurt in a thermos flask. Not sure how though

I can recommend twinks hobnobs made up as flapjacks. Really yummy and nice and soft. They also freeze well. My OH takes them to work and by lunchtime they are defrosted and nice and soft. Thanks Twink.

I find the secret with flapjacks is to cook them for a lot less time than the recipe says - otherwise they end up too hard and crunchy. I base mine on a recipe in my Cranks cookbook:

    Cranks Flapjack
    5 oz butter/marge
    3 oz brown sugar
3 oz black treacle (but I just put a couple of spoons in as it is a nightmare to weigh out and you only need a bit to give the flavour)
    8 oz porridge oats
Pinch of salt ( I never put this in).

Mix the butter, sugar and treacle in a pan - don't let it boil. Mix in the oats and stir thoroughly. Press into an 8 " square tin and smooth over the surface with a palette knife. Bake at 190/gas 5 - the recipe says for 25 - 30 mins but this is far too long! I take them out after 10 minutes or slightly longer - the mix still looks runny but it sets as they cool down. Mark into portions while still hot, and I find it best to let it cool in the tin, otherwise you lose loads of bits when you try to get them out.

I often add raisins or sultanas, and if I haven't got any black treacle, I just use brown sugar but tend just to use about 4 - 5 oz.

I also think home made yoghurt is definitely worth making - it's so easy, and really delicious, and I reckon a lot cheaper (though I guess that depends on which yoghurt you usually buy. I like to buy organic which is obviously more expensive....but I can make HM yoghurt from organic milk for a lot less).

My friend always cooks her flapjacks in microwave. She says they only take a few minutes and always taste lovely.

I prefer my own yogurt now - and it is much cheaper.
I don't have a YM - just use a thermos flask using instructions from OS'er (sorry don't remember who) I microwave litre UHT milk for 2 and a half minutes. Mix with 2tbsp powdered milk and a tbsp yogurt (I use greek) Use plastic spoon to stir rather than metal. Then pour into a flask and leave over night.
Oh and I usually warm the flask with hot water and pour this away just before I fill with the yogurt.
  • Thanks all for your advice. Think I will invest in a yoghurt maker and attempt to cook some flapjacks tomorrow.

One last question (I promise!), can you freeze flapjacks?
