    Did you use the whole sachet of yeast? I had a problem with loaves sinking and found it was because a whole sachet is equal to 7ml and you only need to use 5ml
    Or it could be too much liquid or not enough salt
    Damp humid weather can cause it to sink as well

    Did you use the whole sachet of yeast?

    No BB, I measured out 1tsp as per recipe, I have a set of measuring spoons and flattened it off so it was accurate.

    Are you using strong wholemeal (not brown) and strong white, specifically for bread machines?

    The tesco sachets are what I use (one tsp).

    I also believe the make of flour plays a bit part in a successful loaf. i get great results from Waitrose Organic and although I keep trying Hovis, sainsbury, tesco, I always come back to Waitrose - never a bad loaf.

    Also, the tops usually sink if there is too much fluid. I always use 20ml less water - try this.

    I personally wouldn't disturb the resting period of the dough by taking out the paddle, but then the paddle hole never bothers me :confused:

    Oh, I've also tried Tesco Stonground wholemeal - awful stuff - had terrible results

    The beeping is to indicate you can now add nuts/fruit/sundried tomatoes etc. I don't think that co incides with the time the dough starts to cook - I can check my instructions and the cycle time when at home. If you look at the cycle time of that programme , you would remove the dough and paddle just when it starts to cook.

    Yes - the Tesco was stoneground wholemeal strong flour (which I shall be taking back for a refund under their satisfaction guarantee) and the white was Canadiadian very strong white. The Tesco one said suitable for bread makers but the white just said suitable for breadmaking and pasta.

    We just prefer sandwiches without a hole in the middle of the slice, that's all. The paddle goes a fair way up into the loaf.

    I'm glad it's just not us then :rotfl: . The taste really isn't that nice and all the ingredients are fresh as just purchased.

    I use Sainsbury's Stoneground Wholemeal and it makes fab 100% wholemeal loaves, regular or sandwich. I don't think it's the amount of salt as I use sainsbury's yeast and add the full amount. I also use a mill for the salt (what a pain!) and I only ever do around half because I don't see the point of any more. I don't get any sunken tops. That said I reduce the sugar a bit too after advice on the bread maker thread.

    Thanks Zippychick - I inherited the machine recently so no instructions! I haven't done anything except the basic loaf and I have to say the paddle really annoys me when I take the loaf out and get left with a not so lovely big hole!
