Venison is nice just treated as you would a beef steak, although it does tend to cook a bit faster, so cook it a bit rarer than you'd cook a beef steak, then take it out of the pan and rest it for 5 minutes. Deglaze the pan with a splash of red wine, a tsp of butter, and a tsp of cranberry sauce if you've got it, plus salt & pepper. Pour over, serve with potatoes & broccoli - lovely!2015 comp wins - £370.25
