Claiming back charges...no idea where to start!

Hi guys. i am a complete beginner here! i have 1 bank account and 2 credit cards that i would like to claim charges back from. i have written to barclays and they have offered me £350 instead of the £1200 that i am claiming. i wrote back saying that i wont accept anything less than the full amount and i would take them to court if they didnt pay. they never replied and that was ages ago! i gave up and left it. now i realised that i shouldnt have done that and would like to get my money back from them and also barclaycard and capital one. do i need to start the whole process again with barclays?

:confused:Also, how on earth do i work out the interest owed to me? i am completely clueless and would just love some help!! would be really grateful!
