On the apple page about the iphone it says the hard drive is 8Gb or 16Gb flash drive, the difference is obviously you can store more things if its a flash drive but does the quality degrade

Nope - its digital and so the 1s and zeros will always be 1s and zeros.

The memory will work up to a point and then will fail.
That point may be in a day or a million years. It won't degrade in the same way as a tape :)

I meant would the quality of the videos you put on the iphone degrade if you chose the flash option

Flash option? You may be confusing the type of memory (flash) with the file format (Adobe's Flash, like YouTube). It just means there's no hard drive. However, all video needs to be converted to work with the iPhone into a special type of MP4. iTunes can do this though it is very slow; if you have encoding software and original material (like a DVD) it will be quicker to rip straight to the iPhone format. If you "acquire" AVI's you will need to transcode to the required MP4 format and it is inferior (on my 42" plasma I see more colour banding for example) but there's not a big difference, and the image on the iPhone itself seems pin sharp. Everything from the iTunes store is completely compatible straight away of course.

so if an mp4 video is in flash option would it lose quality as opposed to if it were in normal mode, so what would the difference be between teh 16Gb and 8Gb as described on the apple site

On the apple site for the iphone under capacity it says 8GB or 16GB flash drive

The 8 or 16Gb flash drive refers to them using a solid state memory card (like in a digital camera), rather than a spinning hard drive like in a laptop, or the larger capacity iPod "classics".

(Just the same flash memory is used in the iPod Touch, iPod Nanos etc.)

Nothing stored on it will degrade, no videos copied to it will degrade the will be the same quality as the file on the desktop - you may have to convert / compress the file using MP4 etc to reduce the file size, but the quality that file runs on a desktop will be the same as on the iPhone. Flash memory is just the same as storing on a hard disc, except it's faster, and there are no moving parts. It may well fail eventually, and there is also a finite time solid state memory can be written to, but we are talking millions of times of use, and you'll not encounter it, in the working life of the product IMO. Obviously anything can fail, a hard disc can fail, a memory chip can fail etc. at any time too.
