Making a mushroom risotto for the oh's dinner (wouldn't care but i bought expensive wild mushrooms) only to realise i have no wine in the house!!!! Any idea's what i can substitute with?I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)

I rarely add wine to mushroom risotto. If I have lemons or lemon juice, I'll add a bit of that to give it a bit of brightness to the flavour.0

Seconding (or fourthing?) the stock suggestion. I sometimes put a splash of sherry in at the very beginning although i normally do this with a leek risotto.0
