  • Making a mushroom risotto for the oh's dinner (wouldn't care but i bought expensive wild mushrooms) only to realise i have no wine in the house!!!! Any idea's what i can substitute with?
    I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)
    Card #2 £6. I will not be skint at Chistmas this year!

    Stock definitely or if you want to add alcohol use a form of vermouth - dry martini, Noilly prat or some Pernod if you have it.

    I rarely add wine to mushroom risotto. If I have lemons or lemon juice, I'll add a bit of that to give it a bit of brightness to the flavour.
  • I never put wine in. Just stock, and maybe a splash of something tangy for flavour - lemon juice or balsamic vinegar.

    stock will be fine. I know it's an outside chance, but have you marsala wine ? I always use this instead of wine in mushroom risottos

  • Seconding (or fourthing?) the stock suggestion. I sometimes put a splash of sherry in at the very beginning although i normally do this with a leek risotto.
