some stock would be fine xx0

Stock definitely or if you want to add alcohol use a form of vermouth - dry martini, Noilly prat or some Pernod if you have it.4.30: conduct pigeon orchestra...0

I rarely add wine to mushroom risotto. If I have lemons or lemon juice, I'll add a bit of that to give it a bit of brightness to the flavour.0

I never put wine in. Just stock, and maybe a splash of something tangy for flavour - lemon juice or balsamic vinegar.[STRIKE][/STRIKE]I am a long term poster using an alter ego for debts and anything where I might mention relationship problems or ex. stock will be fine. I know it's an outside chance, but have you marsala wine ? I always use this instead of wine in mushroom risottos"Science is a wonderful thing if one does not have to earn one's living at it" Einstein 19510

Seconding (or fourthing?) the stock suggestion. I sometimes put a splash of sherry in at the very beginning although i normally do this with a leek risotto.0
