    :mad: he wont eat tuna, doesnt like baked tatties, thinks lentils belong in soup, & screams at the thought of curry.. I think it would be a lot easier just to shoot him actually.

    HUNGARIAN GOULASH

    Serves 2

    INGREDIENTS

    2 onions
    1 clove of garlic
    2 potatoes
    350g of beef
    2 tablespoons of olive oil
    200g (½ a 400g tin) of plum tomatoes*
    1 tablespoon of paprika
    1 beef stock cube
    500ml of water
    100ml (½ a 200ml carton) of soured cream

    METHOD

    Peel the onions and chop them into tiny pieces. Peel the garlic and chop it into tiny pieces. Peel and slice the potatoes. Chop the meat into 2cm (1 inch) cubes.

    Put 1 tablespoon of the oil into a frying pan on a moderate heat. Add the garlic and onion. Fry the garlic and onion for about 2 minutes, stirring to stop it sticking. Add the meat and stir round. Cook for another 5 minutes. Add the other teaspoon of oil and the potatoes and stir round. Cook for another 5 minutes.

    Open the tin of tomatoes. Pour the juice into a bowl. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Use half and save the other half.

    Add the tomatoes. Add the paprika. Crumble the stock cube into the water and pour it into the pan.

    Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on the saucepan and cook for 1 hour. Stir from time to time to stop it sticking. Check the water level from time to time and top it up if it starts to dry out. The potato and onion should turn into a thick gravy.

    Just before serving, add the yoghurt and mix thoroughly.

    ADDITIONS & ALTERNATIVES

    Use lamb or pork instead of the beef. Serve with rice, green salad and bread.

    * Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.

  • Meatballs and rice is very simple but delicious.

    1 pack lean beef mince - about £1.50
    1 egg - 15p
    1 large jar pasta sauce - 60p
    As much brown rice as you like - no more than about 40p
    Handful of cheese - 30p
    I add spinach, but you don't need to.

    Beat the egg and add your mince, with a little salt and pepper to taste. Mould into balls. Pop your rice on to boil. Put your meatballs into a frying pan with a little oil and allow to brown on the outside, careful so that they don't stick. Add your tomato sauce, turn down the heat and allow to cook for ten minutes. Serve sprinkled with cheese.

    The sauce absorbs all the meat juices and makes this really yummy.

    Hi. Mix cooked lentils (I cheat & use a drained & rinsed tin of them mixed with 500g mince) with mince for any dish - shepherds pie, chilli, bolognese sauce etc. The lentils cook down & he won't notice them but the bulk is there. Grate a left over eating apple into mince, cooks down & gives a slightly sweeter flavour & extra bulk. My son has never noticed the added extras & he's fussy! Either that or get your gun!

    Egg fried rice is a good one for tidying out the fridge!!!!

    Quiche is also a good cheap filler - 3 eggs make a big one. Scalloped potatoes - ie sliced and layered with milk and flour in a casserole with bits of veggies/ ham/ bacon etc was my Mum's "end of the month" classic. Hardboiled , sliced eggs in cheese sauce topped with mash is a tasty veggie option as well.

    I recommended this one to someone today and it sounded so good, I did it for myself tonight.

    SPANISH OMELETTE

    Serves 2

    INGREDIENTS

    1 potato
    ½ an onion
    2 eggs
    Ground pepper to taste
    100ml of water
    1 tablespoon of olive oil

    METHOD

    Peel the potato and chop it into 1cm (½ inch) cubes. Peel the onion, cut it in half, chop one half into tiny pieces and save the other half.

    Break the eggs into a bowl and pick out any bits of shell. Mix up the eggs. Season with the pepper.

    Put the water into a saucepan on a medium heat. Bring to the boil, then turn down the heat until it is just boiling (simmering). Add the potato. Cook for about 5 minutes, checking that they do not fall apart. Drain the potato in a sieve or colander.

    Put the oil in a frying pan on a moderate heat. Add the onion and potato. Fry the onion and potato, stirring to stop them sticking. When they are golden add the eggs.

    Turn the heat down really low. Cover the pan. Leave it for 10 minutes.*

    After about 5 minutes, turn the grill on to a medium heat.

    Uncover the pan. Put it under the preheated medium grill for a couple of minutes until the top is brown.

    Cut into triangular pieces.

    ADDITIONS & ALTERNATIVES

    An authentic Spanish omelette uses just onion and potato. However, omelettes are a good way of using up leftovers. Bacon, cheese, cooked ham, mushrooms, peas, sweet peppers and tomatoes all work well.

    * Yes, 10 minutes. It wasn’t a typing error. The low heat stops the egg sticking and the long, slow cooking makes the egg fluff up.

    What about marinating chicken legs and thighs, in either a barbeque sauce/ or garlic & herb etc. there are loads of easy marinades, you can knock them up the night before, throw it over some chicken bits, leave in fridge - then when you get home just cook them for 25 mins - with salad? Or cuscous salad? Or new potatoes roasted- thats my personal fave - as its jsut slicing some new pots in half and throwing them in the roasting tin with the chicken! ;)
