Campervan trip Sydney-Melbourne-Adelaide

Hi,
Just wandering if anybody could give any advise on this...
In November, gf and I are planning to go to Australia for almost 5 weeks.
One of the things we want to do is hire a campervan (2 berth with toilet and shower) in Sydney and drive to Adelaide.
We plan to do a 4 day scenic/coastal route to Melbourne. In Melbourne we are going to stay for 3 days and nights to explore the city, so are going to book a powered spot on a camping site (about 9 km from the city) to hook up the campervan and overnight there. Then a 5 day scenic/coastal route to Adelaide.
My question is now... Apart from the camping site in Melbourne that we are going to book, is it necessary to book a camping for every other day too?
As with those scenic/coastal routes, you end up in a different place or town every night, or you improvise and decide to drive somewhere else. So it is very hard to book camping upfront for during the actual road trip.
But is this really necessary? I can imagine some of the places you end up for the night might not be very big, and might not even have a camping.
Can you more or less park up by the side of the road (or a park), or public parking lot, and overnight there in the camper? Any laws against that?
As the campervan would have a toilet and shower, we don't really need to be on a camping, but maybe legally we do? Or maybe it is just not practical or possible to park up in a campervan for the night apart from official camping sites?
