I'm hoping to do this too and am trying to work out the best way as well.
I think that the only hotel you can book is the Hilton and this is on their fully flexile B&B rate. It seems to be about £400 for the weekend so about £100 in clubcard vouchers.

The eurostar deal with Tesco is ending in May. I think buying the return at £59 with eurostar is the best bet. Currently you can book up to about the end of July. I don't know how their booking system works so I would recommend that if you want to go along this route to check their site everyday. Also worth keeping an eye out for promotions with newspapers etc. There was one recently with theTelegraph which I believe was £110 return for two people for a weekend booking but I think you had to travel before August. Not really a great saving on an advanced purchase.
If anyone else has any info or a better way to do this I am interested in hearing as well.0 -
you could fly/ stay using airmiles
its not such a good conversion as using other deals but you have much more choice0 -
Tesco vouchers for Eurostar have been extended until the end of June, not much help to the OP here, but maybe to others. I've just booked 2 return tickets, which I'm really happy about as I got the idea from MSE, so thank you! But, for anyone planning to use the vouchers it might be worth knowing that the weekends are now mostly full up if you want to go on a Friday and come back on a Sunday, so if you can only go on these days it might be worth checking availability first before you apply for the vouchers as they can't be exchanged for anything else... I managed to find a Sunday (very late) but have to go on a Thursday.0
