  • Spaghetti with lentil sauce

    1 onion, peeled & chopped (15p)
    1 red pepper, chopped (46p)
    2tbsps oil (10p)
    1 garlic clove (5p)
    1tsp dried basil -or whatever herbs you prefer. (31p)
    1 can chopped tomatoes (21p)
    4oz red lentils (20p)
    1 tbsp tomato puree (17p)
    3 quarters of a pint of water
    salt and pepper
    8oz wholewheat spaghetti or other pasta (23p)
    knob of butter -optional (10p)
    Parmesan cheese to serve (45p)

    Fry the onion and pepper in the oil for a few minutes, add crushed garlic, herbs, tomatoes, lentils, tomato puree and water. (Don't add any salt yet -it makes the lentils tough)
    Bring to the boil, then turn down the heat and leave to simmer gently without a lid for 15-20 minutes. Meanwhile, half fill a large pan with salted water and bring to the boil, add the pasta and cook for about 10 minutes. Drain, then return it to the pan and toss with the butter.
    Season the lentil sauce with salt & pepper.
    Serve the pasta with the sauce poured over it, with parmesan cheese and a green leafy salad.

    Cost =about £2.43, £3.43 with salad!

    (If you want to really "push the boat out" it's nice with a dash of cheap red wine added to the sauce.) :D

    ok i had the biggest think ever and have decided on cannelloni as its my fav although it isnt the cheapest meal it does taste sooo nice so here it is

    spinach and ricotta cannelloni

    8 lasange sheets pre cooked (32p basic)
    250g ( 9oz ) fresh spinach (£1.29)
    250g ( 9oz ) ricotta cheese (79p)
    1 large onion, finely chopped (11p)
    2-3 cloves of garlic, crushed (35p although priced as whole bulb)
    salt and freshly ground pepper (10p)
    500g sainsburys creamed tomatoes (29p)
    1 tablespoon of olive oil (about 20p)??
    125g mozzarella sliced (57p)

    grand total £4.02 i know its high but its yummy :p



    my shopping list all on sainsburys prices so could be done cheaper

    1 wash spinach and cook gently
    2 put aside and let cool
    3 fry the onion and garlic gently
    4 chop the spinach fine
    5 now mix the ricotta, spinach, onion, garlic and seasoning together
    6 cook lasagne
    7 place mixuture onto the lasagne sheet then roll gently
    8 place in an ovenproof dish
    9 cover with creamed tomatoes
    10 place slice of mozzarella ontop
    11 cook in oven on 180 for 30-35 minutes
    12 you could serve with a crisp salad for an extra 69p

    Remember: you can fiddle about with most recipes/ingredients e.g. using water/leftover veg. water/wine and any combination of these for stock. Use Elmlea rather than top of milk or cream. Substitute skimmed milk for milk(to my surprise, it is the best milk for cooking and makes the very best caf!!)

    Potage Flamande(serves 4-6 minimum)
    [a good seasonal one atm, from Delia's Frugal Food, recommend this book entirely]

    3/4lb potatoes-14p / 2 leeks-18p/ 3/4lb brussels sprouts-23p / 2oz butter-17p / 3/4pt stock-nil / 1pt milk-23p / 2tbsps top milk or cream-8p / salt-nominal/ freshly milled black pepper-nominal / squeeze of lemon juice-4pmax / 4 rashers streaky bacon, rinded and grilled crisp-12pmax. from Value Bacon pieces.

    #Peel and slice potatoes.
    #Halve leeks lengthwise, then chop crosswise in chunks, wash thoroughly.
    #Trim and peel sprouts if necessary. Halve the small ones; quarter the large ones.
    #Melt butter in a large saucepan.
    #Add all the veges and stir, coating well in the melted butter.
    #Cover and cook gently for 5mins, then add stock and milk.
    #Bring to a simmer, then cover and cook gently for 20-25 mins, or until the potatoes are soft.
    #Liquidise or sieve, add top of milk or cream, reheating very gently.
    #Taste, season, add lemon juice, then crumble crispy bacon on each serving.

    This is a CHEAP, sumptuous and sublime first course which also freezes well.

  • For my first post here, I'd like to share 'magic tea' with you.

    It's delicious, nutritious, and only contains a little mechanically recovered meat :rotfl: It sounds kind-of-yukky, but actually tastes nice. When we were saving our deposit for our house, we ate this every other night for a year ... and we survived to share the recipe! (and bought the house!)


    Serves 2 very hungry people - cost about 40p per person
    1 tin economy beans
    1 tin economy plum tomatoes
    1 tin cheap-as-chips hot dog sausages - drained and chopped
    1/2 bag of economy pasta
    herbs, tabasco as desired

    Mix together the beans, tomatoes and sausages in a pan. Add herbs, tabasco as desired. Heat gently
    Cook pasta according to pack instructions.
    Serve together.
    If you are feeling especially rich, serve with a couple of slices of economy white bread on the side, to mop up the sauce.

    Variations:
    add sliced mushrooms or peppers
    remove the hot dogs and add mixed pulses for vegetarians
    add pepperoni / pepperami / chorizo
    add a few fresh basil leaves
    use other tinned meat such as ham, rather than sausages

    The following is a simple, tasty, and fairly kid friendly menu. Looking at Tesco's web site it can be done for £4.28. Prices show the cost of how much of the ingredient we are using and in brackets the total cost of the ingredient. I’ve also indicated a veggie option which is a little more expensive.

    French Onion Soup with home made croutons (£0.76)
    Spaghetti Bolognese (£2.58 / £2.67 Veggie)
    Sliced bananas with Strawberry Delight (£0.94)


    French Onion Soup with home made croutons
    Ingredients:
    Packet of French Onion Soup £0.54
    3 Slices Bread £0.10 (budget loaf £0.37)
    4 tbl Olive Oil £0.10 (bottle £0.96)
    1 tbl Mixed Herbs £0.02 (tub £0.22)

    Method:
    Preheat oven to 180°C
    Combine 1tbl of mixed herbs with 4tbl of olive oil.
    Brush bread with mixture on both sides.
    Slice Bread into inch cubes.
    Bake in 180°C oven for 10-12 minutes (until crispy)
    Make up soup as per packet’s instructions.
    (Optional, grate a little cheese into the bowls of soup)

    Spaghetti Bolognese
    Ingredients:
    500g Beef Mince / Quorn Mince £1.65 / £1.74
    3 cloves garlic, chopped £0.12 (bulb £0.35)
    Tin Chopped Tomatoes £0.21
    Spaghetti £0.41
    2 tbl Tomato Puree £0.05 (tube £0.24)
    2 tbl Mixed Herbs £0.04 (tub £0.22)
    1 Chicken (or veggie) Stock cube £0.06 (box of 12 £0.68)
    2 tbl Olive Oil £0.05 (bottle £0.96)

    Method:
    Fry mince in 2 tablespoons of olive oil until brown, if using veggie mince follow instructions on packet.
    Put Spaghetti on. Follow packets instructions.
    If there is excess water/fat discard this.
    Add tin chopped tomatoes, tomato puree, garlic, mixed herbs.
    Add 300ml of chicken stock made with stock cube.
    Mix and leave to simmer until spaghetti is ready, then serve.
    (Optional, grate some parmesan over the Bolognese)

    Sliced Bananas with Strawberry Delight
    Ingredients:
    Supermarket own brand Strawberry Delight £0.37
    300ml Milk £0.20 (2 pints £0.76)
    3 bananas £0.27
    Chocolate £0.10 (bar £0.49)

    Method:
    Make up Strawberry Delight as per packets instructions. Slice the 3 bananas into 4 bowls. Add ¼ of the delight and grate a little bit of the chocolate bar over the top.

    Being a vegan, I can stretch 5 quid for several days (I probably spend around 8 quid a week on food). I'll be back later to provide some recipes!

    Jamie may not approve of this but it makes practical sense!

    Chicken Curry for a family of 4 / 5

    Ingredients:
    1. Whole chicken from Aldi (£2)
    2. Jar of curry paste (£1)
    3. Pack of rice (50p)
    4. 4 Nan breads (£1)
    5. Bits of veg (onions, tomatoes, garlic, pepper, chillies, potatoes) (50p)


    Method:
    1. Chop up chicken - leave bone in .... sauce will taste much better when cooked. Marinate with curry paste.
    2. Fry chopped onions, garlic, pepper and chillies in oil till brown.
    3. Add 2 tbsp of curry paste to the oil and fry till fragrant
    4. Add chicken and brown.
    5. Add potatoes.
    6. Add water and stew till thick and chicken cooked.

    Total . £5!
  • This is a meal i make a lot and in fact its one of the family favourites

    Chicken pesto pasta

    Tesco Healthy Living Skinless Chicken Breast Fillets 500g - £2.49
    Tesco Value Green Pesto 190g - £0.99
    Tesco Healthy Living Creme Fraiche 200ml - £0.62
    Tesco Penne Pasta Quills 500g - £0.67
    TOTAL - £4.77
    (all prices from tesco online)

    Put the pasta on
    Defrost and cube the chicken, fry off with a splash of olive oil.
    Empty the whole pot of Creme Fraiche into a pan on a low heat and stir in the jar of pesto. Once the chicken is browned add it in. Heat through the sauce whilst waiting for the pasta to cook. Once it has, drain and mix in the sauce. Serve.

    There are actually many ways to do this dish, you can use turkey instead and i have made it before with spicy sausage ( on special for 60p), just pick the right pesto to fit the meat. Ie red pesto is better with spicy sausage. You can also use the sauce with fish and add lemon or mustard instead of the pesto. You can add peppers or chilli's as well and if you get most of the stuff from the reduced counter its even cheaper! Its really filling as well.

    Best of all it heats up well for lunch the next day so leftovers are never wasted.

    Here's one my Nan taught me and my wife and I LOVE it! This is genuinely easy to make, does not have dozens of ingredients, is ready in ½ hour start to finish and costs less than three quid!

    NAN's Tuna Casserole.

    Ingredients - Tesco’s prices (sorry Jamie!):
    2 tins tuna chunks in brine @ 56p - £1.12
    250g (1/2 packet) of spaghetti - 500g for 42p - 21p
    1 tin Campbell’s condensed mushroom soup (the secret ingredient!) - 42p
    Some cheese to grate on top - max £1 for full flavour cheddar - £1
    Total = £2.75

    Method:

    Preheat oven to 200C
    Boil the spaghetti as usual in lightly salted water for about 9 mins. Remove from heat, drain and return to the saucepan.
    Add the tin of soup (must be condensed Campbell’s).
    Drain the two tins of tuna and add these to the saucepan.
    Stir it all roughly together with a wooden spoon until well mixed but without breaking up the tuna too much.
    Transfer this mix to a Pyrex or casserole dish without lid. Grate cheese over the top until covered.
    Bake for 15 mins.

    Then divide into four sections, serve, eat, then (if there are only two of you) return and eat the rest shortly after.

    I tried one of Jamies own recipes and it was excellent. Full of nutrition and very cheap.

    1 Hock (from the butchers) £1.80
    3 large potatoes peeled and cut up into roasting size chunks 30p
    3 large carrots cut into 3in chunks 23p
    3 sticks of celery 20p
    1/4 swede into 3in chunks 10p
    5 green cabbage leaves. 12p
    Thickening granules 16p
    salt and pepper.
    Water

    Boil and simmer the hock in plain water for about 2 hours. After this leaving in he hock add the rest of the ingredients and leave to cook for about 15-20 mins until veg is cooked through then a few minutes before serving add the cabbage (whole leaves). Take out the hock and add a little thickening granules to make the juices into a glaze. Serve the veggies piled up in a large serving dish. tear of the meat from the bone and place this on top. Pour over some of the juices, or all if you like, serve and enjoy. This will feed a family of 4.

    £2.91!!! Bargain. Could be a lot cheaper if you use your own home grown veg like me!!!!:T

    If you don't use all of the juices, you can use it as stock for anything.
    The veggies are really nice as they are cooked in the juices from the hock. Gives a great flavour and really simple to make.
