    Thank you Pink-winged for trying to help. I made the jam this morning using a recipe I found online. Slightly disappointed with it as it didn't seem to want to set :o. Will nip down to the library after Christmas and just get a book out and see if I can find a better recipe.

    Am hoping OH likes it and that it tastes better than it looks! :rotfl:

    Hi.
    I have large tins of plums from Approved foods.
    They are in apple juice and a tin has 1.5 kg drained weight.

    I would like to make plum jam from them. I have made it before with fresh plums only.

    I have looked at the other threads for jam making and preserves but I don't know whether to stew them in the apple juice first before adding the sugar.

    I will add pectin because I have heard that tinned fruit has less pectin.

    I don't yet know how soft the plums are because I don't want to open a really big tin without knowing what to do with it.

    I'd be glad of any advice on how to proceed. Thanks in advance.

    I'm going to make some plum jam next week (already made chilli jam & chutney as Christmas gifts). Will 1kg of plums & 1kg of granulated sugar be enough for 2 standard size jam jars? How much water will I need? How long do you heat the sugar in the oven for & what do you heat it in?

    This is how I make plum jam or any jam for that matter.

    cook fruit in small amount of water (any fruit or mixture of fruit) for about 10 / 15 minutes or so
    push through sieve and weigh
    add same amount in weight of sugar or slightly less if you like less sweet jam
    bring to boil to desolve the sugar stiring all the time
    boil rapidly for 10 minutes or so - I do use a thermometer
    heat jars in oven while doing all this
    then pot into hot jars and put on lids

    I never use pectin but add a quartered lemon in with the fruit at the beginning.

    Ive never failed yet - touch wood.
