Well.............I personally don't bother to roast the peppers (or even skin them).
I use fresh tomatoes, peppers, garlic, a little dried chilli, onion, salt, pepper and either chicken or vegetable stock.
Once it's cooked I blitz (liquidise) it till smooth.

i do spicy red pepper and carrot soup, i dont bother to roast or peel the peppers, just chop and deseed cook with carrots, onion, marmite, water, pepper and chilli powder then blend until smooth. we don't peel 'em either, we bake 'em in the oven with red onions and garlic 'til nice and soft then blitz with a tin of toms

I fancy making a stilton soup tomorrow, but one that doesn't use broccoli or spinach.
Maybe apples? Cheese & apples are so great together.

i was also thinking what soup i could make as i have a huge chunk of stilton left over, i personally like the look of parsnip and stilton soup, there is a easy sounding recipe on the telegraph website, also leek, stilton and mushroom sounds quite different and maybe worth a try??:j:j:j0

i really like lentil soup.so i've never tried a cheese soup. but how about stilton and cauliflower?
would that work. know cauli cheese is lush but might work as a soup?0 -
