The report back - it was fantastic. I used basil instead of oregano since I only really like oregano in pizza sauce but it went down a storm. Good timing too since I had unexpected visitors. We all went back for seconds and the leftovers I had planned to have for lunch tomorrow soon disappeared . Had twinks hobnobs done peanut style for afters. Cheers folks
**edit** DH has just requested the stew for tea again tonight0 -
Paulie'sGirl wrote: »OH calls it "Tuscan Bean Stew" - its origin in anything italian is more down to the brand of tinned toms I buy!!
1 tin kidney beans, drained
1 tin canellini or borlotti beans (both taste different to me, so it makes a nice change) drained
1 tin most value baked beans, rinsed of sauce
1 tin tomatoes
1 large onion chopped
2/3 garlic cloves crushed
oregano
stock
tom puree
a few spuds peeled and cut into 2" chunks
Heat some olive oil in a casserole, sweat the onion and garlic til softened. Chuck the contents of all the tins in the pan. Add the potatoes. Add enough stock to just cover everything. Add two good tablespoons of tomato puree, a good few pinches of herbs, salt and pepper. Bring to the boil and then simmer until the potatoes are done and the sauce is thick.
Perfect reheated for lunch. Best eaten with crusty bread and a bottle of red...
Well I figured I might as well start at the top and work my way through. I am trying out a variation of stew, nabbing some inspiration from your recipe! Figure I might as well record my recipe (i say recipe, but that makes it sound planned...) and results, or I will forget both!
3 cloves garlic
2 medium onions
1 carrot
1 tin garden peas
1 tin chopped toms
150g of soaked chickpeas
Stock
Dark soy sauce (seemed like a good idea at the time)
Thyme
Bay leaf
Some sweet potato to go in about 30 mins before I dish up.
No idea if it will work, but I have to try! :rotfl:OD £lots Egg Card £329.04 Parents £650 Sofa £741.780 -
I recently tried a recipe for veggie shepherds pie, which I'll go and look up. I've already tried improvising on it (with some mung beans instead of all lentils). Its basically something like this:
- fry up some chopped onions, carrots, thyme
- add stock, red wine
- add your pulses, season, leave to simmer for a while
- in the meantime make a sweet potato mash
- make up the pie with plenty of grated cheese and thyme on top.
I think the recipe uses canned pulses but I use dry and cook them first.
Also love red lentil soup with tinned toms, garlic, plenty of chilli and lemon juice!0 -

Me too but rather than the herbs I add a litrle curry powder for flavour. When I've put the mashed spuds on top I sprinkle over paprika.Nevermind the dog, beware of the kids!0 -

In fact I had a special request from DH as I was going to be away could I make a batch of the bean stew for him to survive on till I get back ... apparently it is even better on the third day (it hasn't survived that long before but he's eking it out). You are responsible for one poor man not starving0

Wow, that's a step towards my ultimate goal of curing world hunger...
Its one of those tasty "peasanty" dishes that people just love. And no-one need know its sooooo easy... (yes dear, I slaved all day on your favourite stew...:rotfl: )
Bit of a secret: completely made up one day when i was 19 and my rents were away.... I was broke so had to play "redy steady cook" in my own kitchen. I still make up recipes like that now. Some work, some don't
Your OH is right though, the flavour does develop. Can't keep it too long though, cos beans start to get a bit funky...:o
Much luv,

Looking back over some of the old posts to get some inspiration and came across this one and it had some fab recipes for pulses as I have a cupboard full of dried and tined pulses that need using ,I could not go completely vegetarian but I do want to cut down the amount of red meat we eat both to save money and for a healthier life style.
