As someone who has been working away a bit I agree on the homemade and wholesome part. You get very very fed up with stodgy hotel food.
I also second the 'something from the oven' idea. That way you have time to have a chat and get to know him rather than fussing around cooking. Far better. Personally i always do something from the oven for someone I'm just meeting... I hate feeling fussed. I'd also say stick to something you know you can cook well. Lasagne sounds just the ticket to me as well but you'll know what you feel comfortable cooking.

Agree with the lasagne option - can prep in advance, and then cook it in the oven.

Simple, but very tasty, and makes a nice dinner party dish.

Really easy, a bit posh chicken recipe that is so easy and tasty. Might not work if your kids don't like mustard though...Chicken with wholegrain mustard.
Firstly brown off onion, add chopped chicken breast (you can buy bags of frozen small ones that are very good value). Then when cooked through turn up ehat and add some sliced mushrooms if everyone likes them then a big dollop of wholegrain mustard and then take off heat and add creme fraiche ( lower fat gives a tarter taste if watching waistlines) and then I also stir in few drops of soy sauce for a bitt of colour and salty-ness. Soooooooo easy but simple but people are always impressed weirdly! Plus if you serve it wtih some in season spring veg like new pots or asparagus and mange tout tis very yummy.Green and minimal chemicals is the new black- I know a fair old bit about sustainability, specially energy and transport stuff. BIG BIG thanks to everyone who replied. I have made a note of all the recipie ideas and will try all of them over the coming weeks & months.
There's been a bit of a change of plan. Looks like the boss won't be coming after all! In fact my husband probably won't be home for dinner that night either. Something's gone a bit 'Pete Tong' in the office and some year end budget report needs to be written ready for a meeting on Thursday. So they will all be there late getting it all finished.
OH says I probably won't see him till at least 10.00pm that day. Thank goodness this isn't a regular occurance - I think it's just the time of year (i.e. year end).
On a positive money saving note - dinner isn't going to be half as expensive if I'm just feeding 2xkids and me!!!
