I would make a lasagne - can be prepared well in advance and is easy to serve up. Either serve with a nice mixed salad and garlic bread, or alternatively roast chunks of red tomato, pepper, courgette, aubergine, and cherry toms with a bit of olive oil and a couple of garlic cloves for delicious mediterranean vegetables. I have found it always goes down a treat when I've made before.

Fajitas are my signature dish- everyone loves them.

But, he might not have a spare shirt and fajitas are messy.

I'd go with something basic and healthy - if he's eating out all week he will welcome something light.

Salad, roast chicken, new potatoes etc. and he can help himself to what he fancies.

Nice bottle of wine wouldn't go amiss.:D

Thank you for all your replies, lots to think about!

Particularly the suggestion ref plying him with alcohol!! :D

Lamb steaks sounds yummy and I have some posh redcurrant and something (can't recall without looking) jelly in the fridge.

But perhaps the suggestion that I just serve up what we normally have is best. OH did say that anything that wasn't a burger would probably go down really well. Kids love sausage and mash, so maybe a trip to the butcher for those sausages...

Will be trying all the recipies at some time though.

Wishing you all a very happy Easter weekend x

For pudding I find separate dishes of raspberries (frozen & defrosted), HM meringues and creme fraiche goes down well - people can mix and match what they want to eat.

  • I'd add a second vote to a good homemade lasagne with garlic bread.

Make the meat sauce now even and freeze it. Then its just an assembly job on the afternoon. It wont come to any harm sitting in the fridge til you're ready to cook it.

    Best of luck!
  • whenever i am away with work I always get sooo fed up with eating out (it sound brilliant but the novelty wears off!) - mainly because nothing ever comes with any veggies, most things seem to be frozen and deep fried, and if there isnt enough you cannot ask for seconds! - last time away I met someone who invited me round to theirs for chilli, salad and garlic bread, and it was lovely just to sit rund a table, eat and chat - and I was so grateful someone had gone out of their way to cook for me!

So dont worry about it, just cook something simple and relax.

Definitely keep it home-made & wholesome. My guess is that the guy is forced to eat out a lot of the time and some real food would be very much appreciated.

  • This is what I'm going to cook if I have to impress. http://forums.moneysavingexpert.com/showthread.html?t=732425 . It's basically chicken casserole with wine, veg and tin of tomatoes. I did it with the help of people on here and it was one of the nicest meals I have EVER had!
I would recommend a trial run though. It's dead easy - but only if you've already done it! I served it with mash. So 2 things you can have in dishes in oven while you get ready. Kitchen smells lovely too!

I like the idea of lasagne - serve with garlic bread (HM if poss!) and some salad. Its easy to prepare in advance so you're not spending all evening in the kitchen when you could be joining him and OH for a glass of wine!
