You could have something indoor during the winter or get people in during the break if that is possible.

This sounds good on paper and in an ideal world would make sense, but schools have limited indoor space and have to work around exam timetables and cirriculums. Most schools have a sports/funday/fayre in the summer because the weather is more likely to be dry and people are more likely to come and visit and (hopefully) part with their cash.
Yup, and if you want an Easter Fair then having it within a month of Easter is a good plan, a Christmas Fair can't really be earlier than November although in October it would be an Autumn Fair but not a lot of time to get organised when schools only go back in September. And so on!

However, I would say it is worth checking on other local groups that you might have links to: the local Scouts have sometimes managed to clash their Christmas Fair with the Infant / Junior joint school fair which dilutes the help available. However they find that sometimes people go to one, and then on to the other if they stagger starting times, so it's not a complete no-no if you find they do clash.

If you hope to sell £1500 worth of tickets then the PTA can afford to buy the prises themselves. This is what we did in Primary school PTA. We would give £100 cash, buy a TV/IPOD and a mobile phone etc.

We also did a M&S hamper. Ask in M&S if they have any boxes you can have to create a hamper, they might give you some freebies. Parents asked to donate only M&S food/toiletries. We usually had enough for 2 good hampers (there will be a mum who can wrap them up in cellophane to make them look good). Also put together 2 children hampers, one boy, one girl for children to win.
