Cooked chicken recipes?

HI all, sorry I havent been on much since Thursday - worked at home on Friday and spent most of the day doing housework!
Anyway the point of my post - OH and I went to the local farmers' market this morning and, amongst other things, bought 3 medium sized chickens for £5 - bargain I thought. SO, I have now roasted all 3 chickens, thinking that was the most important thing, and that I could think what to do with them later - thats where you kind people come in!
I am planning on doing 1 or 2 chicken and veg pies - anyone have a tried and true recipe (squeaks, I will have a look in the indexed messages too, so dont worry about taking this message off if you think you should).
What else can I do with 3 cooked chickens? Was thinking about chicken nuggets but have only made them with raw chicken. OH wont eat rice or anything spicy so would love some ideas from you all - preferably ones I can freeze after cooking/assembling.

For those of you that are interested, we also bought 2 large lamb joints for £7 and a selection of cheses (including Camambert (sp?)) and £2 of off the bone ham for £6 :-) Feeling suitably smug!

There's loads in the Old Style Recipe Collection, the Slow Cooker Index, and the Cooking section of the MEGA Index...

In quite number of them, especially curries, you can make the sauce and then add chicken bits near the end - making sure that they have enough time to heat thoroughly.
Don't forget to use the carcasses for stock and/or soup.
