Need ideas for OS strawberry dessert!

Hi all
As we all know its mothers day sunday and here at my house we're having a special tea for mum e.g. yummy mini sandwiches with crsut removed, sparkly bottle of asti etc...
I had the idea of making a dessert for her as a surprise... problem is I don't know any! :rotfl:
I need some ideas please!
I would like a cold dessert e.g. cheesecake, gateux type thing as we always cook her sponge cakes and its getting a bit dull.
I would love to do something with strawberries as they're her fave fruit.
I also need it pretty simple as I'm still learning basic cookery skills.
Ideally, would also be great if it wasn't too high on the calorie/fat content as we're all trying to watch our weight right now.
Any ideas much appreicated xx

Hi chloebelle,
I'm not great at making desserts but pavlova is foolproof.....even for me. The base can be made a day or two in advance and just top with whipped cream and strawberries when you plan to eat it.
For the base:
4 egg whites
8 oz caster sugar
1tsp white vinegar
1tsp cornflour
1tsp vanilla essence
In a clean dry bowl whisk the egg whites until stiff (you can turn the bowl upside down and they won't slide out) and gradually add 4oz sugar (a spoonful at a time). Whisk well after each addition.
In a separate bowl mix the the other 4 oz of sugar with the cornflour.
Add the sugar and cornflour mix, all in one go, into the egg white/sugar mix and whisk again until firm and glossy.
Quickly fold in the vinegar and vanilla.
Spoon the mix onto a baking tray covered with baking parchment or greased greaseproof paper and smooth with the back of a spoon to form a circle.
Cook at 130-140 degrees for an hour. (120 degrees if it's a fan oven) Then leave it in the oven until the oven goes cold.
Store in an airtight container until you need it.
Add whipped fresh cream and fruit just before serving.
PS save your egg yolks to make pasta carbonara.

How about
Making up a strawberry jelly using fizzy water/lemonade/cava/champagne (adjust to suit your budget) jelly stays fizzy
cut up some strawberrys and either stir into jelly (will float to top) or let layer of jelly set then layer strawbs then more jelly leave to set a bit, then layer of jelly
when everything set, mix up Strawb flavour angel delight/instant whip pour over jelly then decorate with strawbs or mix strawbs thro the topping. You could then top with whipped cream.....indulge yourself and your mum, forget about the diet for a day
I'm just doing something similar for some friends today. I've made individual strawb thingies in wine glasses, (half pint of jelly for 6 wine glasses) about 20mls in each then to set them I've angled them a bit in the fridge to set so jelly sets in a diagonal, then going to top up with 'whip' later this morning
If I can get photobucket to work for me (it always seems to freeze my laptop!!!) I'll post piccie later

Another suggestion, just dip strawbs halfway in melted chocolate, white or dark chocolate mousse with strawbs is lushious too0 -
Pavlova is a good idea - I made one the other week with raspberries.
Another favourite in our house is a shop bought sponge base (although you could make one yourself), filled with sliced strawberries, and topped with a quick-set jelly sachet. You can then pipe cream rosettes around the top when the jelly has set, or just serve with pouring cream.Thanks to MSE, I am mortgage free!
