How Long Do You Keep Home-made Soup For?

    When i make soup and have some left over i put my bowls in individual freezer bags, pour the soup into the bowls but on top of the bag. I then place these bowls in the freezer. Once frozen, lift the soup out the bowl with the bag, turn the bag inside out so that the frozen soup is now in the bag, tie a knot in it and place it back in the freezer.

    This saves space in the freezer, keeps my bowls handy and i can choose a soup out the freezer knowing it will fit perfectly in my bowl before re-heating. :)

    An easier way is to line the bowl with the bag,pour the soup into the bag and place the whole lot in the freezer,once frozen remove the bowl ,soup remains frozen in the bag...this works even better with tupperware type containers.
    PS,Sorry forgot to add,poundland have reusable,bowl shaped containers with lids...10 for £1..ideal for freezing and reheating soup in one container.

  • Well, I suppose I have been a bit sloppy. We had a super pea, leek and celery soup. I always make double so we can have the soup on two days running. Having made the soup and served, day 1, I put the lid back on and left it roughly 24 hrs on top of stove. I thought I had brought it to the boil next day, but perhaps not all the soup got to boiling point, or not boiled long enough. Anyway, my long-suffering spouse has had the runs for a whole day now, and not sure when it will finish.

    So, my new rule is: cool immediately and put in fridge. Bring to boil and simmer for at least 10 mins.

    One of the aggravating factors is that I have a tendency to put the pot on too wide a gas-burner, so the sides of the pot and the soup at the edges, get more heat than in the middle, so it looks like it is boiling when it isn't. (This para added by spouse.)

    2 days max - but to be fair that's how long it takes us to go through it!

    When I make soup,I make a big pot that does lunch for a week.Once the pot is cold,it goes in the fridge and keeps fine for a week.I'm a vegetarian though,so no meat/fish in the soup.I've never had any problems.

    A week here. I only eat veg soup with no added, rice, pasta or lentils anyway so it's literally veg and stock and it lasts a week in my fridge. Delicious every time and no poisoning here either :)

    If it only contains vegetable/beans/pulses then I'll continue to use for it up to a week if refrigerated but if it contains meat or dairy then 3-4 days maximum.

  • Same question really... once frozen, how do you safely reheat the soup in the microwave? do you really need to defrost it first then heat it? cant you just heat on full power like most frozen items nowadays?? confused.... :)
  • I was told by health and hygiene to keep hot things hot and cold things cold
  • and not to boil and cool down for 2 weeks
