Hi All,
So coming to the end of the month and ran out of money - so trying to get by for the next few weeks on cupboard ingredients...
have loads of rice - any ideas how I can turn this into a meal?!? It's long gran, easy cook stuff, so not much use for risottos etc...
got some sausages and pork in freezer, and some salmon which has been in there for a looong (8 months +) - will it be safe to use?!?
If anyone has any suggestions on how to make a meal for me, boyf and little boy using next to no ingredients - would love to hear from you!! xxx

rice bakes nicely in the oven with some veg, cooked meat and double the amount of water.
Could also make some kind of pudding the oven at the same time and some bread too.

Off the top of my head we have:

carrots
onions
potatoes
2 rather sorry looking parsnips
mushrooms
tinned sweetcorn x 2
frozen:
ice cream (3 tubs of the stuff!!)
beefburgers
steak (fillet steak for £1!! supermarked reduced bargain)
sausages
dubious salmon (been thee for 8 months?!?)
bread
quorn pieces
mini sausages wrapped in bacon (left from christmas!!)
chipolatas (see above!!)
2 x pork rump steaks
biggish piece of cheap steak
cupboard:
flour
rice (lots!!)
risotto rice
tin butter beans (no idea what to do with these?!?)

tinned salmon and tuna

tinned toms

ready made curry sauce (korma)
Fray Bentos Pie (boyfriend's purchase - he can have that for tea one night!!)

I wouldn't worry about the salmon being 8 months old. I've eaten it older than that and it's been fine. You could make some HM fish cakes with it.
HM chocolate sauce see the thread this morning about what to serve with choc blancmange, it's very easy, keeps in the fridge.... theoretically!

I likel spicy parsnip soup, you can 'dilute' with other veg... as you have available. YOu just need a spoon of curry powder or curry paste.

For the soup:
saute your chopped carrot, onion, parsnip with some curry powder. Add stock and a peeled chopped potato.

making parsnip soup as we speak but after assessing how little i have in, I'm going to have to hit the shops i think...Positive vibes:

One of my favourite cheapy meals.....
Melt about an ounce of butter in a pan, add a chopped onion and gently fry. Add 8 oz (any) rice and stir. Add about 1 1/2 pint of stock and glass of white wine (optional). Cook for about 20 mins, add a handful of frozen peas, cook for another 5 mins that's it. Sprinkle with a bit of cheese and serve. You can add any bendy veg you have or the salmon/tuna. It ends up quite creamy and delicious!

you could make some fishcakes with the tuna or salmon, chop a bit of onion up a dollop of mash and season it, then mix it into cakes with an egg to bind and fry, or make a fish pie with fried onion sweetcorn and mushrooms mixed in with fish add a white sauce then top with mash.
bread and butter pudding with some of your tinned fruit.
slice the steak up into strips and have a stir fry with mushrooms carrots sweetcorn and noodles.
slice steak into strips and use with fajita kit.
sausage casserole with the butterbeans an onion and a tin of toms.
veggie curry with the butterbeans and a potato and onion the quorn +rice.
a nasi goring type dish which is cooked rice with sliced burgers/sausages and veg mixed through it with herbs/spices added.
you could make a pizza base with the flour and add anything from the fridge.

How about making a potato pie with the cheap steak cut into cubes,chopped onion and carrots then fill the pan with cubed potatoes.Add enough water to cover veg and boil for a good couple of hours.You could do this in the SC.When cooked place the cooked filling in an ovenproof dish and cover with a topping of shortcrust pastry and bake until lovely and brown.Serve with mushy peas and gravy for an authentic lancashire favourite
