Too many boiled spuds

    I second Olliebeak and make potato croquettes - they freeze ok and can be cooked from frozen

    I got a reduced priced cabbage 10 days ago and 3 swedes at 10p each, so at the moment I'm doing deliberate bubble and squeak for the freezer, for when lazy days happen. I always used to just shove the veg in the pan, but last time got adventurous and put in some garlic powder, lots of pepper and can't remember what else, but it was good.

  • Potato salad made with mash is lovely. Just make normal mash then add salad cream and spring onions ( I blanch the spring onions a bit so they aren't so oniony IYKWIM)

    Sliced, sauteed and eaten with bacon, mmmmmm!


    I went along these lines :) got my 5yr boy to help me too!!

    He sliced up the boiled pots into smallish chunks, while i browned off some sausages, sliced and put bk in frying pan,
    added the chunks of pots to get some colour.
    whisked up 4 eggs in a bowl and added that to the pan
    when half way cooked i put some cheese on top and whacked itt under the grill!
    Went down well with a tin of baked beans very filling. Definitely something worth experimenting with.

    Thanks everyone for their ideas ill try something different next time I peel too many spuds ;)

    and definately will try this out, my step dad loves a good bubble n squeak for his dinner from the left overs, so ill let him try this pretty soon lol xx
