Help with Apple Braids

Options
Hello there,

I have been reading the apple braid recipe for some time and finally decided that I have to make it! I have a Bifinett BM that has two sections so you can make two 1lb loaves. Can I make the apple braid recipe in this? Or I can do it by hand but (shocker!) have never made bread by hand before and was wondering if someone could please give me a quick step-by-step?

Thanks

I use my breadmaker for the braid mix..seems to be fine done this way
  • I can't help with the making them by hand, but why don't you split the ingredients between the 2 sections.
I made this for the first time on Sunday morning, I have MR breadmaker which does up to a 1 1/2 lb loaf. The dough was knocking on the lid by the time I took it out - made 2 of them with the intention of freezing one. Took them out of the oven and DD1 said "what on earth are they?" So she cut a slice off - "yummm - all we need is some cream" DD2 came round with her fiance - half of one was gone and took a bit home with them.
Went DS girlfriends house and took half of one round with me, it was still warm, "yummm - you didn't make that did you ? and don't you dare tell me it was something you just threw together!!"
They were both gone by Sunday evening - they were a resounding success and I had everything in the house to make them - I just can't believe how quickly they disappeared - I'll just have to have another go at some more at the weekend and hopefully one of them will end up in the freezer.

Thanks - I think I'll make them for my bf tomorrow night. I've so many settings on my bm but I think I'll try the quick setting which is an hr and a half. Sorry to ask really dumb questions but when they come out of the bm, I roll them out in order to plait them and put the filling in?! I ask because I normally leave the bread in there until cooked but perhaps I should take them out as soon as the kneading is over?

Well I made the braid for the first time today. Luke warm response I thought! I had to hold back, as I'm trying to keep with low GLycemic load at the mo, so low wheat. THey ate it and said it was OK, DD counted it as cake and didn't have any, as she's off it for lent.

I left it for ages to rise, as I had to go out, I don't think haolf an hour would have been enough as it wasn't very warm today.

Will quick setting be OK Kal? Isn't that a bake setting? I used the pizza (or dough ) setting.

  • I have a dough setting on my BM and I used that - so machine stops when dough is ready. I took it out of the machine onto a floured board cut it half and rolled each piece out and filled and braided them - left them for about 1/2 an hour and then baked them.
So you only do to the first "rising" of the dough in the BM

I've made these, and the family love them, but mine never rise very much, whereas ordinary dough done on the same cycle in the bm does, I wonder what I'm doing wrong?

Maybe that's why mine was sooooo massive! I made it into one braid. Do you make it into two?

I left my dough in the machine after the 45mins setting, It stays warm for about an hour I think and continues to rise, I think an enriched dough needs this, it always has a longer rising time. Also left it for ages to rise before it went in the oven.

  • The mixture makes two braids, or you can do one and some iced fingers with the other half of the dough. I do mine in the BM on the dough setting, but you can make it conventionally.

Kal: can you set your BM to dough?
