Frozen vegetables.......a false economy?

  • However I have worked out a great way to make frozen sliced green beans taste yummy....

    fry them in a big dry pan over a high heat until all the excess water has evaporated (about 3-4 mins) then put in a tbsp of olive oil, some salt and a couple of halved garlic cloves which I remove before serving. Fry the beans until they're about to brown. They come out crunchy and tasty.

    This is great, I find green beans are the one veg I don;t buy frozen as it tastes 'funny' when cooked!!

    However I find most frozen veg is LOVELY and swear by it for most things!! It's so much better for you then fresh and tinned!

    i always steam frozen veg in the microwave then seaon etc, ive never had soggy frozen veg, ive had sogy fresh veg though

    I have a pack of frozen Mediterranean vegetables that I want to use in a vegetable lasagne. It says on the pack you cook them for 30 mins and then serve and you can't reheat them. However if I put them in my lasagne frozen, surely they'll make it really soggy because of all the water coming out of them?

    Stupid question I know but should I cook them for like 10 mins before assembling the lasagne or should I chuck them in frozen?

  • I would cook veg first and drain as much liquid as I could before using in lasange. I dont think you will come to any harm reheating.

    30 minutes to cook vegetables? They would be mush. I would partly cook them then drain as much as possible (try and cook them without adding extra water maybe?)

    Wouldn't the pasta sheets in the lasagna soak up the water when they're cooking?

    I only like peas, corn and leaf spinach. Did try cauli and broccoli but didn't rock my world. I do freeze veg that would otherwise go off but generally cooked in something first we
    Here I think sogginess is less of a issue

    I buy "value", or the most basic, frozen cauli and broccoli for convenience and so that I don't waste stuff - I tend to be a bit faddy with my eating so the freezer is essential. Until last year, it was always almost as good as fresh, and I too was thinking along the lines of better nutritional value.

    However in recent months I have noticed that especially the frozen cauliflower has looked a bit old and tired and smells as though it's been around a while before being frozen. It's not beyond the realms of possibility that some consignments of fresh vegetables that have been held up by something have ended up being sold off for freezing after being considered no good for the fresh market.

    I don't think they are tbh.I use frozen veg (mixed veg/peas/baby carrots/peppers) quite a bit being a singley. I think they are cheaper in the long run & in a lot of cases,are more nutritional.I still use fresh veg like brocolli & cauliflower as I too think these are bloody aweful frozen.
