Mushrooms - how do you cook them?

Feel really silly asking but I ALWAYS seem to destroy them. Having roast beef later and thinking of frying them. They are quite large closed button mushrooms. Do I use butter or oil etc? How long? What temp? Etc. Thanks

    Overcooking is the usual thing. I generally fry mine in oil (or butter) until they are just showing golden. Timing depends on temperature - a medium heat for about five minutes is usually enough.

    I microwave them. I wipe them and slice them or leave them whole if they're small ones. I just put them in a ceramic bowl, put in a small dollop of butter and sprinkle with a little black pepper. Stick a lid on (or plate) and microwave on full for about 3 mins (that's a good bowl full). Take a peek give them a stir and pop them back for another minute if necessary.

    They stay nice and firm this way and look good!!
  • Mushrooms absorb flavours and cooking juices well, so they often go well in sauces.

    But simplest way is to fry as others have mentioned, with a bit of butter and season to taste.

    I just peel them and toss in a medium wok for 7 mins - no oil, no butter. Very healthy and full of mushroomy flavour. Or, stick under a medium grill , again no butter or oil, for 10 mins or so. A more intense flavour.

    I have a mushroom bhaji recipe, something along the lines of , fry a chopped onion, add mushrooms and fry, add a tbsp of curry paste of choice, cook for a minute or two. Chopped fresh coriander if you like it. Serve with currry etc as a side dish, or make a meal of it with chappattis, naan or rice.

  • I wipe or wash them depending on how dirty they are and peel them if they are getting past their best. Then I chop and fry them, a splash of oil, perhaps some garlic, often a splash of lemon juice. Depends on what I want them for - usually for about 5 minutes.
    May all your dots fall silently to the ground.
  • All went well - i halved them before frying in a mixture of olive oil and butter for about 3 mins. They were sizzling but not at highest temp. I then added a clove of garlic, halved. Some juices started to come out but by the time we had everything served - with quick stirs - all was ok again. About 5-6 mins in total. I think i was overcooking them before but at too low a temperature. Wouldn't have expected the garlic to make much of an impression but what can i say - YUMMY! Thanks everyone.

    Glad they were successful! Just out of interest - next time, try doing them in the microwave and compare - easier washing up a dish than a pan as well!;)

    I don't use my microwave very much TBH but mushrooms are great in there. I also use it for cooking rice - FAB and wouldn't do it any other way! For heating milk for cereals, for doing scrambled eggs and melting butter, chocolate etc.
