Runny marmalade

I made my Seville orange marmalade and it has come out runny :mad:. (I haven't tried marmalade making for years and now I remember why.) Can I add more pectin and boil it up again? Or am I stuck with marmalade puddings for weeks.

Yes, its fine to boil it up again - you shouldn't need more pectin with seville oranges - bursting with it, so probably just needs a bit longer. Put some saucers in the freezer, then drop spoonfuls on, and if it wrinkles on top when you push it gently, its fine.0

thats right no more pectin you didnt really need it in the first place.
The juice of a lemon and a bit more sugar and bring to the boil again; the saucer test is the best a v. cold saucer and a spoonful of marmalde cool in fridge if it is setting ok it should wrinkle when pushed to one side.

Did you use the orange pips? The recipe I use says to tie them in a bit of cloth and boil them with the pulp, apparantly there is loads of pectin in them *sounds daft but it works*0

I had this problem with my last lot of lemon marmalade (I use Mamade lemons). I am just using it as it is, but having to get it out of the jar using a teaspoon!0

The last marmelade I made was an old recipe that included apples. As I had some cookers someone gave me I made it. It was the best marmelade I've ever tasted.
You could try mixing some cooked apples with the runny, plus the lemon juice and boil it up again.
I really recommend the apple and orange marmelade.0
