Pie Mash and Liquor

I know the pie and mash bit,but how do you make the liquior??:confused:

    :D It's basically just parsley gravy.
    Traditionally you should use the potato water. Make a roux with butter and plain flour, blend in the potato water and bring to the boil (like a white sauce but using water not milk). Stir in chopped parsley, and if you're very traditional, a little vinegar. The brown malt stuff, not the clear vinegar.

    PS forgot the salt and pepper to taste!

    PPS DH has just reminded me that even more traditional was to use the cooking liquid from the jellied eels:eek: :eek: Yuk. I always used to use the potato water;)

  • Gosh how sheltered am I? I thought this only came from the pie and mash shop I didn't realise I could make it :rotfl: I shall make it this week and revist my Londoner childhood and introduce my toddler to a bit of pie and mash, thank you so much!

    Oh what I wouldn't give for a plate of Pie & Mash and liquor, there used to be a shop at the top of the Old kent road by the Bricklayers Arms pub before the flyover was built that did the best in London ,although to be fair there was also a nice one in the Roman road and near aldgate Station. I haven't seen one for a long time though. Nice tiled floors and highly polished booths .

    I think there's still one near the Barbican - in the street where the market is - forgotten its name.

    OH uses packet parsley sauce with half water and half milk. Then dilutes it with vinegar. He insists on white pepper, not black, too It smells foul and everyone else in the family steers well clear!

    Thanks for the link Dronid - awwwwww the Deptford one isn't there anymore :(

    Used to live near to that one, mmmmmm was lovely. My mum still lives in Deptford but I don't go down the high street anymore. I wonder how long it has been closed?

    my hubby is a londoner living up here and we discovered manzies did deliveries via ebay initially, i think it was to see how many orders they would get. they now order from their own web site as noted in a post above and we get our first delivery from them this wed morning -cant wait mmmmmmmmmmmmmmmmmmmm
