Lasagne - freezing and defrosting questions

    Like tawnyowls I freeze lasagne in plastic take away containers take it out to defrost then heat it up in the microwave - delicious. Someone at work did say that Tesco had some good value foil trays which you could freeze in but I don't know the price.

    I freeze my lasagne cut into meal sized portions in plastic containers and heat them up in the microwave. Delicious!

    I use the rectangular Pyrex dishes with the white plastic lids. They come in three different sizes and stack nicely in the freezer, and the fridge. They can also be used in the freezer/oven/microwave and dishwasher (not that I have a dishwasher, but I have the "dishwasher-able" dishes so I live in hopes one day - when that day gets here, I am fully prepared!!).

    They are pretty expensive initially, but I bought mine a few at a time - mostly from Woolworths and Asda, both of whom have pretty good offers on them from time to time (BOGOF/½ price type of thing) and I've used them constantly for the last 3-4 years so I think they were worth the price.

  • We cook the lasagne in a large dish, let it cool right down, then cut it in to portion sizes.

    We then put these portions in cling film, wrap them up and freeze - works for us

    I line the foil trays with foil, cook the lasagnes, then when they're cold, i partly freeze them, then lift the lasagnes out of the trays, but still in the foil,wrap them in more foil then freeze them.it saves on the foil trays when you do it like this ;)

    I have several of the pyrex/plastic lidded dishes that I use. They cost £2.99/£3.99/£4.99 at Dunelm Mill, depending on whether they are 1,2 or 4 portion size for lasagne, and they last forever.

    I've lost count of how much I've spent on cheap plastic boxes from places like the Range or Poundstretcher which don't seem to last very long and obviously can't go from fridge-oven-microwave like Pyrex.

    Totally agree with you Annie-C! I used to spend loads on "cheap" dishes which didn't last (either the lid cracked or the bottom part did :mad:) whilst telling myself that cheap was good - then I realised that a bit more initial outlay was worth it in the end as they lasted ages (have been particularly impressed with the plastic lids, which I thought would show signs of perishing, but haven't...:D ) and I love the fact that the Pyrex stuff is so versatile and hardwearing.

    In 4 years, I have only had one dish that chipped and needed throwing away (and that was because I bashed it against something else!! :o) - and the "spare" lid is still in my cupboard, just in case one decides to show signs of age at some point...but so far, so good!;)

    hey folks, probably a really daft question but i'm making lasagne for tea tomorrow night and as there is only my in the house there is bound to be heaps left over. is it ok to freeze it in portions then (defrost first?) reheat in a micro?? if i can i'll be able to take it for meals at work and not get sick of it by eating it non stop for the next three days!

    It certainly is OK to freeze lasagne. If you are going to re-heat in a microwave just make sure the container you freeze it in is microwavable. :j
