I wonder if anyone is feeling inspirational today?
Im thinking of ordering a veggie box but though I like all the ingredients im not sure what to do with them. Can anyone assist?
They are:
courgettes
leeks
swiss chard
purple sprouting brocolli
spring greens
red pepper
I also have in the cupboards/fridge:
cheese
creme fraiche
potatoes
lentils
pasta
risotto rice
brown rice
butter beans
tinned tuna
tinned sardines
polenta
noodles
eggs
beef mince (only enough for maybe 1 portion)
onions
tomatoes (tinned and fresh)
baked beans
I also have lots of herbs and spices and the cupboard and the normal flour etc. I need something preferably I can batch cook and freeze or very easily prepare and also healthy as im trying to be good. I want to avoid buying lots of things so any ideas?

If you follow the link and scroll down to "Vegetables" you'll find recipe ideas for most of yours listed there.
Your veg box may come with a recommended recipe for one of the items too (mine does) and if they have a website - they too may have recipe ideas for this week's offerings.

Hmm lots of possibilities.
How about: leek and cream cheese crepes.
Spring greens, butter bean and potato soup
Tuna and broccoli risotto
I love courgette and cheese omlettes or you could make them go further make a courgette and potato fritata

Actually I have some lasagne sheets, could I make a veggie type of lasagne and still make it fairly healthy. Ive never tried one without meat in before.

My first thought was ratouile but I'm not sure what else you could have with it. Egg fried rice is nice and you could just put some veg in with the rice. Stuff peppers with corguettes, onions, mince and rice add some herbs.
I'm sure other will come along with more helpful ideas.

I'd use the swiss chard in a stir fry
Courgettes with cheese in a quiche
Leek and Potato Soup or with onion,carrot,celery,potato,garlic and lentils to make lentil soup

Try making monkeygirl's ratouile a bit more filling...
Pour it in to an oven proof dish make some hollows and drop an egg into each. Cover with grated cheese and bake until the eggs are cooked and the cheese is golden and crisp (I think I do mine at Gas 6-7 for about 25 mins)0
