Laying a Yorkstone Floor In a Kitchen

We are going to fit a new kitchen, but the existing asphalt floor was uneven, so we have broken it up. Underneath we have found the old Yorkstone paving slabs, which we now intend to lay as the finished floor.

Just looking for some advise on the laying procedure. Total area is about 9m2

My idea is:

1. Dig down to the required level (save the ash, they have been laid on, for reuse if needed), compact the ground if required, sand blind if required and then lay a visqueen dpm.
2. On top of the visqueen, lay 50mm Jablite (or similar) insulation board (I thought with it being a kitchen, there is the possibility of condensation forming on the flags if no insulation)
3. On top of the Jablite, lay a 50mm compacted sand bed and then lay the stone flags on the sand. Dressing the visqueen up behind the kitchen base units or behind skirting boards.

Any comments?

Also any advise on cleaning up the flags. They have some staining from the asphalt and bits of what appears to be latex from maybe some old floor tiles. Have tried jet washing one flag, but makes no difference. Our thoughts is to try brick & mortar cleaner next?

Finally, any recommended products for sealing them once laid?
