    Say you have a member of staff or two for 30hrs per week @£6 an hour = £180 = £9380 per year.... out of your profits. I think you're being very, shall we say, 'optimisitic' about your costs, your opening hours, and your profit.

    Its all very well opening just a limited amount of hours, but you need to be opening the hours your buyers want, otherwise they will simply go elsewhere. And when they go elsewhere once because your not open, they'll continue to do so.

    You need to factor in wastage as well, our local chippy knows when its busy times are, so obviously cooks ahead for these, but if you go in late they cook to order. However, they still have some stuff kicking about in the hot cabinets, which presumably they have to ditch if no-one buys it that night.

    And I'm afraid that now I've twigged that I'm always going to have to wait - either because it's a peak time and they'll be busy, or it's not and they'll be cooking to order - I prefer to go home and put the oven on ...

  • Im also looking to open a fish and chip shop in the near future and the final hurdle i have is obtaining the amount to purchase the fryers. Im not looking to take a loan if possible, what i wanted is to find a company that lease the fryers to us and secure the loan against the equipment. Have googled until my eyes popped out but can only seem to find companies that offer this for the small fryers not the large ones you see in fish and chip shops. Does anyone have any advice that could help me please?

    I am having the same problem! I have a shop, which is under renovation, but the fryers are so expensive I am shopping round too, as I hope to lease them also.

    I know a couple of the main manufacturers have agreements with certain leasing companies, but I don't have full details - hoping to receive some this week.
