Thanks for the replies, everyone on here is so great! But is now a good time to say that omelettes make me sick? I have no idea why.

That website is great haribojunkie! But some bits are so random. The first three pages are filled with stuff like:
you have 100% of the ingredients for a cup of coffee. Well great that'll feed 4!

It'll certainly help whilst I trawl that website looking at the other recipes though.

I would do a pan of mashed potato first...

Make fishcakes with the tuna and mash then make vegetablecakes with some of the veggies grated/finely chopped with cheese.

roll in HM breadcrumbs OR just flour then shallow fry - serve with spinach salad

Vegetarian could have a poached/fried egg on top of their vegecake :D

    OR vegetarian Chilli

fry your chopped vegetables then add cumin and chilli flakes and a little flour. Then add tinned tomatoes and kidney beans and stock and cook for 30/40 mins - serve with jacket potato or rice :)

    OR Fish Pie
use your frozen fish in a white sauce with spinach if liked - top with mashed potato and cheese - serve with green beans or spinach salad :D

    OR
Jacket Potatoes with... Mix tuna with cucumber cut into 1cm cubes and sweetcorn if you have it plus a little red onion thinly sliced - mix with salad cream (or mayo) and pop onto your jacket potatoes :D

OR you could do pancakes a day early :D:D:D practise ?
