help - what to cook tonight

Hi all, I hope you all forgive me for being so uncreative and can give me some good ideas before I resort to take away.

We got back from a short holiday late yesterday and haven't had time to go shopping and I'm feeling totally uninspired and cannot think what to cook for dinner with what we have in.

We have almost every type of meat and fish you can think of in the freezer but almost nothing to go with it. We have:
half a bag of spinach
one courgette
potatoes
red onions
green beans
half a cucumber
lots of eggs
butter
milk

plus tins (potatoes/kidney beans/tuna/tomatoes etc) and your usual store cupboard items.

Your help would be very much appreciated. By the way I need to feed 4 adutls, one of whom is a vegetarian.

    I'd make a frittata by frying the red onion, courguettes, sliced spuds and sliced green beans in a little butter.Add the spinach now if you like. Then add whisked eggs and milk to the pan and cook until it's bubbling. Pop under the grill until cooked, add some grated cheese and return to grill until bubbling.

    Do we have to use all the ingredients like ready Steady Cook? :D

    how about a spanish omlette?

    grate the potatoes and fry them up with the onion, courgette etc - then add the green beans/spinach for a little while
    beat the eggs - how many depends on how big your pan is/how hungry you all are! - and add to the veg.

    when it's nearly cooked through you can pop it under the grill to finish off.

    well, that's my suggestion...

  • jaket potatoes tuna mixed with pasta???mayo???{usual store cupboards items}} chop the red onion also and chuck in with chopped cucumber delish!!
