I freeze both butter salted and unsalted and Bertolli olive spread. I buy it when it is on special offer and freeze. 2 packs of butter will be coming on holiday and will be put in cool bag to defrost normally.

It appears you can freeze butter and I found some useful tips on how to freeze butter on a site called useful x.
Also I discovered there that you can get 'canned butter' too which I'd never heard of! Can't say I've ever noticed it in the shops, but I guess that saves you the trouble of having to freeze it anyway.0
